    Cruise Ship's Corrective Action Statement

Item No.: 06
Site: Potable Water-Distribution- Halogen Charts
Violation: On 06 January, 20 January and 05 March 2009, the charts were not changed out at 24-hours and overlapped for greater than 8 hours. On 13 February 2009, there was no notation of calibration on the halogen chart.
Recommendation: Ensure that halogen analyzer-chart recorder charts are changed, initialed, and dated daily and contain notations of any unusual water events in the potable water system.

Site: Potable Water-Production/Bunker - Halogen Charts
Violation: For several days since the last inspection, there was no notation of calibration of the chart recorder.
Recommendation: Ensure that halogen analyzer-chart recorders used in lieu of manual tests and logs are calibrated at the beginning of bunkering or production, and the calibration is recorded on the chart or in a log book.

Site: Potable Water-Distribution Halogenation
Violation: The back-up pump was removed for maintenance prior to the last inspection and has not been replaced.
Recommendation: Ensure that at least one backup halogen pump is available with automatic switchover to maintain the free residual halogen in the event that the primary pump fails, an increase in demand occurs, or the low chlorine alarm sounds.

Site: Pantry-Bar Pantry #4
Violation: There was a long water hose attached to a deck tap without a backflow prevention device.
Recommendation: Install an appropirate backflow prevention device on the deck tap.

Site: Potable Water-Bunker Station - Potable Water Hoses
Violation: Both potable water hoses were stenciled with the words "Potable Water Only," however the stenciling is worn and difficult to read.
Recommendation: Ensure the potable water notation is readable.

Site: Galley-Topside Galley
Violation: A container of yogurt was found inside an undercounter refrigerator with a internal product temperature of 46-48 °F. This item was discarded.
Recommendation: Except during preparation, cooking, or cooling, or when time is used as the public health control, ensure that potentially hazardous food is maintained: (1) At 60°C (140°F) [roasts 54°C (130°F)] or above, or (2) At 5°C (41°F) or less.

Site: Galley-Reach-in Refrigerators
Violation: Some of the reach-in refrigerators had gaps around fan units and electrical conduits, making cleaning difficult.
Recommendation: Ensure that multiuse food-contact surfaces are: (1) Smooth; (2) Free of breaks, open seams >1 mm (1/32 inch), cracks, chips, inclusions, pits, and similar imperfections; (3) Free of sharp internal angles, corners, and crevices; (4) Finished to have smooth welds and joints; and (5) Accessible for cleaning and inspection by one of the following methods without being disassembled, by disassembling without the use of tools, or by easy disassembling with the use of handheld tools commonly available to maintenance and cleaning personnel such as screwdrivers, pliers, open-end wrenches, and Allen wrenches.

Site: Pantry-Bar Pantry #4
Violation: The rear panel of the upper compartment of the ice machine was cracked along the edge. There was a brown material resembling rust in this area.
Recommendation: Repair or repalce the cracked rear panel.

Site: Galley-Garde Manger
Violation: A blue cloth was found wrapped around a pipe beneath the preparation counter, making cleaning difficult.
Recommendation: Remove the blue cloth as it is unnecessary and impedes proper cleaning.

Site: Galley-Hot Galley
Violation: The hot plates were difficult to clean due to gaps and missing fasteners. These items are scheduled for replacement at the next drydock period.
Recommendation: Ensure that nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Site: Food Service General-Decks
Violation: The deck surfaces in the food service areas were rough. This is a repeat finding. The edges of the deck surface coating were damaged in some of the pantries.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas, are maintained in good repair.

Site: Food Service General-Bulkheads and Deckheads
Violation: The deckheads and bulkheads in food service and food storage areas are difficult to clean dure to attached piping and equipment, missing fasteners and other difficult to clean features.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning.

Site: Buffet-Crew Mess Buffet/ Beverage Station Area
Violation: There were missing stainless steel panels at the deck-bulkhead juncture behind both the buffet and the beverage stations.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning.
*Inspections scores of 85 or lower are NOT satisfactory
