Site: Potable Water-Port Evaporator High Saline Discharge
Violation: There was not a proper air gap at the end of the rubber tube attached to the vent on the reduced pressure assembly device. This was corrected.
Recommendation: Ensure that air gaps are at least twice the diameter of the delivery fixture opening and a minimum of 3 cm (1 inch).

Site: Potable Water-Starboard Bunker Station
Violation: One of the caps on the potable water filling line was not fastened by a chain. The cap had been removed from the line and placed face down on other piping in the station.
Recommendation: Ensure that the potable water filling line has a screw cap or plug fastened by a non-corroding chain to an adjacent bulkhead or surface in such a manner that the cap or plug does not touch the deck when hanging free. The connections for the hose attachments shall be unique and fit only potable water hoses.

Site: Galley-Coffee Station
Violation: The individual milk cartons were stored on a wet tray inside the reach-in refrigerator. This was corrected.
Recommendation: Ensure that food is protected from contamination by storing the food: (1) In a clean, dry location; (2) Where it is not exposed to splash, dust, or other contamination; and (3) At least 15 centimeters (6 inches) above the deck.

Violation: The drip pan housings underneath the hot range were deep and less than two inches high, restricting access and making cleaning difficult.

Violation: There was condensate dripping from inside refrigeration unit #M-8 into a plastic cup on the deck.
Recommendation: Ensure the refrigeration unit is repaired.

Violation: The rinse curtain on the dishwash machine was heavily soiled.
Recommendation: Ensure that warewashing machines; the compartments of sinks, basins, or other receptacles used for washing and rinsing equipment, utensils, or raw foods, or laundering wiping cloths; and drainboards are cleaned: (1) Before use; (2) Throughout the day at a frequency necessary to prevent recontamination of equipment and utensils and to ensure that the equipment performs its intended function; and (3) If used, at least every 24 hours.
