Site: Potable Water-Potable Water - Distribution Halogen
Violation: The free chlorine residual in the potable water distribution system was measured manually at 0.53, 0.55, and 0.65 ppm, while the corresponding values on the analyzer and recorder was 2.4, 1.52, and 2.53 ppm.
Recommendation: Ensure that the free residual halogen measured by the halogen analyzer is ±0.2 mg/L (ppm) of the free residual halogen measured by the manual test.

Site: Galley-Galley - Dry Store Locker
Violation: Several plastic bags filled with assorted baking powders were found stored on the locker shelves. There was no indication on the packaging or the external bags which identified these powdered products.
Recommendation: Ensure that working containers holding food or food ingredients that are removed from their original packages for use on the vessel, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar are identified with the common name of the food.

Site: Pantry-Beverage Station Pantry
Violation: There was a difficult to clean gap between the top of the coffee maker and the cabinet above. The top of the coffee machine was heavily soiled with layered dust debris.
Recommendation: Ensure that nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Site: Buffet-Buffet - Ice Machine
Violation: There was a difficult to clean gap present around the ice machine and the counter above and around it. The machine is fixed and there were heavy dust debris areas above the machine and along the sides under the buffet counter.
Recommendation: Profile the gap around the ice machine.

Site: Galley-Galley
Violation: There was a difficult to clean gap present between the two deckhead mounted microwave ovens. There was heavy dust and dirt debris present both in the gap between the units and along the metal supports and power cables for the machines. It was not clear from the bracing supporting these microwave ovens if they were removable or not.
Recommendation: If the ovens are easy to remove for cleaning, the violation can be corrected by removing the ovens and cleaning around them more often. If they are not removable a profile strip should be installed to fully close the gap.

Site: Bar-Bar - Under Bar Top
Violation: There was a difficult to clean gap present along the juncture of the chest freezer and deck/counter foundation.
Recommendation: Ensure that nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Violation: There was a difficult to clean gap present between the two deckhead mounted microwave ovens. There was heavy dust and dirt debris present both in the gap between the units and along the metal supports and power cables for the machines.

Violation: The undercounter shelf just left of the handwash station was soiled with food and dirt debris along the lower interior panel. Clean bowls, pots, and pans were stacked and stored on this shelf.
Recommendation: Ensure that cleaned equipment and utensils, laundered linens, and single-service and single-use articles are stored: (1) In a clean, dry location; (2) Where they are not exposed to splash, dust, or other contamination; and (3) At least 150 mm (6 inches) above the deck.

Site: Galley-Galley
Violation: Two filth flies were noted circulating around the galley. Only dishwashing was taking place during the inspection, but clean dishware was present in most areas.
Recommendation: Ensure that the presence of insects, rodents, and other pests is effectively controlled to minimize their presence in the food storage, preparation, service areas, warewashing, and utensil storage areas aboard a vessel.
