Site: Galley-Main Galley - Appetizer Pantry Forward
Violation: The drain lines from the 5 undercounter refrigerators (A-23-F3) were not directed to a drain or gutterway and water was pooling on the deck below them.
Recommendation: Ensure that drain lines from all fixtures, sinks, appliances, compartments, refrigeration units, or devices that are used, designed for, or intended to be used in the the preparation, processing, storage, or handling of food, ice or drinks are indirectly connected to appropriate waste systems by means of an air gap or air break.

Site: Galley-Lido Center Galley
Violation: The crushed ice chute did not extend fully into the ice bin for ice machine #2 and the section of exposed material at the end of the plastic part of the chute where ice contacted just before entering the bin was difficult to clean and soiled. Staff extended the chute down thru the ice bin during the inspection.
Recommendation: Ensure that materials used in the construction of multiuse utensils and food-contact surfaces of equipment are: (1) Durable, corrosion-resistant, and nonabsorbent; (2) Sufficient in weight and thickness to withstand repeated warewashing; (3) Finished to have a smooth, easily cleanable surface; and (4) Resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.

Site: Pantry-Deck 7 Forward Ice Pantry
Violation: The interior upper panel above the two cubers in the ice making section were heavily corroded and difficult to clean. Additionally, there were two screws submerged in the water bath below the right cuber panel inside the machine. This was corrected during the inspection.

Violation: The left door gasket was not tight-fitting on undercounter reach-in refrigerator A-22-F and condensate was present just above the door edge and on the preparation counter immediately above the door.
Recommendation: Repair or replace the door gasket so the door shuts tightly when closed.

Site: Food Service General-Main and Crew Galleys - Range Tops
Violation: Several Lang model range tops in both galleys had a grease pan chute which inserted into a housing section of a length near a meter with only a small opening in which to clean inside this housing. The channel was very difficult to clean.
Recommendation: Ensure that nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Violation: There were open holes where utility lines such as conduit and piping penetrated the deckhead over the beverage station. This was corrected during the inspection.
Recommendation: Close open holes in the deckhead and grommet those where utility lines pass thru.

Site: Galley-Main Galley and Crew Galley - General
Violation: Deck tiles were cracked or broken near deck mounted equipment and grout between tiles was recessed in those areas and near gutterways throughout. These conditions were not severe in all areas but were noted throughout galley sections.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning.

Violation: The deck juncture with the bulkhead in the galley to beverage station food corridor was not coved.
Recommendation: Ensure that bulkhead and deck junctures are coved (including galleys, pantries, deck/counter junctures at buffets, bars, waiter stations, and dining room work counters).

Site: Buffet-Lido Buffet - Forward Beverage Station
Violation: There was an accumulation of dust debris on all the deckhead wooden panels, especially in the gap between the panels directly above the beverage station.
Recommendation: Ensure that decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas, are cleaned as often as necessary.

Violation: The buffet counter and deck were not coved on the passenger service side.
Recommendation: Ensure that bulkhead and deck junctures are coved (including galleys, pantries, deck/counter junctures at buffets, bars, waiter stations, and dining room work counters).

Site: Other-Crew Mess Beverage Line
Violation: The artificial light level over the beverage counter was below 220 lux.
Recommendation: Ensure that the light intensity is at least 220 Lux (20 foot candles) on food preparation surfaces, and at a distance of 75 centimeters (30 inches) above the deck in food preparation areas, handwashing facilities, warewashing areas, equipment, and utensil storage, pantries, toilet rooms, and consumer self-service areas.

Site: Buffet-Lido Buffet - Aft Dessert Island
Violation: The artificial light directly above the buffet was not shatter-resistant or shielded. This was corrected during the inspection.
Recommendation: Ensure that light bulbs are shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, and linens, or unwrapped single-service and single-use articles.
