Site: Potable Water-Far Point Charts
Violation: Most of the forward and aft far point halogen analyzer-chart recorder charts had a range of 0-10 ppm. Staff showed a work order which was placed on 12 January for charts with a 0-5 ppm range.
Recommendation: Ensure the halogen analyzer-chart recorder charts have a range of 0.0 to 5.0 mg/L (ppm) and have a recording period of (and limited to) 24 hours.

Site: Potable Water-Mineralizer Backwash Drain Line
Violation: The air gaps for the mineralizer backwash drain lines were not included on the list of air gaps. This list was updated in January 2013. This was written on the last inspection report.
Recommendation: Update the list of air gaps.

Site: Potable Water-Distillate and Permeate Lines
Violation: After the mineralizers, the distillate lines from the evaporators and the permeate lines from the reverse osmosis system were not striped to the production chlorine injection point in accordance with ISO 14726 standards (blue/gray/blue).
Recommendation: Stripe or paint distillate and permeate lines directed to the potable water system in accordance with ISO 14726 (blue/gray/blue). Ensure no other lines have the above color designations. Stripe or paint these lines at 5 meters (15 feet) intervals and on each side of partitions, decks, and bulkheads, except where decor would be marred by such markings, including potable water supply lines in technical lockers.

Site: Potable Water-Starboard Bunker Station
Violation: The caps on the two lower potable water filling lines did not have their chains fastened to them.
Recommendation: Ensure the potable water filling line has a screw cap fastened by a noncorroding cable or chain to an adjacent bulkhead or surface in such a manner that the cap cannot touch the deck when hanging free. Ensure the hose connections are unique and fit only the potable water hoses.

Site: Recreational Water Facilities-Center Pool
Violation: Manual tests of the center pool indicated 0.88 ppm and 0.72 ppm by the staff member and 0.12 ppm and 0.26 ppm by the inspector. The pool was open at the time of the inspection. The halogen analyzer indicated 2.22 - 2.26 ppm. Staff determined that chlorine was supplied to the analyzer, but an abundant amount of air was supplied to the pool.
Recommendation: Maintain a free residual halogen in recirculated RWFs in the following ranges: (1) swimming pools, between 1.0 and 5.0 mg/L (ppm).

Site: Recreational Water Facilities-Center Whirlpool
Violation: Upon entrance to the center whirlpool machine room, the halogen analyzer and chlorine dosing pumps' visual alarms were flashing, indicating an error. The analyzer indicated a free chlorine residual of 0.10 ppm. Upon arriving at the whirlpool a short while later, the attendants were closing the whirlpool until this system error could be corrected.
Recommendation: Maintain halogenation and pH control systems in good repair and operate them in accordance with the manufacturer's recommendations.

Site: Recreational Water Facilities-Whirlpool Safety Signs
Violation: The safety signs did not include 'no children in diapers or who are not toilet trained' and did not caution elderly persons and children using the facilities.
Recommendation: Provide safety signs for all RWFs, except for baby-only water facilities. Ensure the signs, at a minimum, include the following words: (2) no children in diapers or who are not toilet trained. In addition to the safety sign requirements in section 6.7.1.1.1, install a sign at each whirlpool spa and spa pool entrance listing precautions and risks associated with the use of these facilities. Include, at a minimum, cautions against use by the following: (3) pregnant women, elderly persons, and children.

Site: Recreational Water Facilities-Water Slide Safety Sign
Violation: The safety sign for the water slide could not be located.
Recommendation: Provide safety signs for all RWFs, except for baby-only water facilities. Ensure the signs, at a minimum, include the following words: (1) do not use these facilities if you are experiencing diarrhea, vomiting, or fever; (2) no children in diapers or who are not toilet trained; (3) shower before entering the facility; and (4) bather load #.

Violation: The time control plans for the beverage stations did not identify the refrigeration units for the milk kept on time control. These refrigerators were not labeled 'time control'.
Recommendation: Maintain a written time control plan(s) that ensures compliance with these guidelines on the vessel and make it available for review during inspections. Post a time control plan at each outlet where time control is used. Ensure plan(s): (2) List refrigeration and hot holding units (compartments and cabinets) on time control (the physical units must also be labeled as such). Site: Buffet-Crew Mess
Violation: Approximately 30 individually packaged yogurt containers were holding at 45 - 55°F in the worker side undercounter refrigerator next to the self-service cold well. Also, there were approximately 30 individually wrapped packages of butter which were holding at 47°F. The refrigerator was on temperature control. Staff immediately discarded these products.
Recommendation: Except during preparation, cooking, or cooling, or when time is used as the public health control, maintain potentially hazardous foods at 57°C (135°F) or above, except that roasts may be held at a temperature of 54°C (130°F); or 5°C (41°F) or less.

Violation: There was no bulkhead/deck coving at the entrance corridors to the port and starboard pantries which service the aft grills. Food items and soiled dishes were transported through these corridors.

Violation: Water was leaking from a deckhead seam and pooling on the deck between the combination ovens and tilting pans. According to staff, a pipe in the deckhead was leaking, The leak was corrected.

Violation: There was a heavy accumulation of dust and dead insects, such as moths and beetles, on the bottom of the air filter compartment of unit #6.083. Also, the lowest filter was in standing water and was heavily soiled with the dust and dead insects.
