Site: Food Service General-Pests
Violation: Pest were in the following food service areas: Deck 9 - Solarium Bar Pantry - Two flies were in the area. Deck 9 - Park Cafe - One fly was in the area and one crawling insect was on the front countertop. Deck 6 - Schooner Bar - One fly was in the area.
Recommendation: Effectively control the presence of insects, rodents, and other pests to minimize their presence in food areas.

Site: Buffet-Deck 9 - Windjammer Beverage Stations Port and Starboard Side
Violation: An open penetration into a void space was inside the technical space below the ice machine. This was corrected before the end of the inspection.
Recommendation: Ensure decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are maintained in good repair. Ensure decks, bulkheads, and deckheads in food preparation, warewashing, pantries, bars, and food and equipment storage areas are constructed and maintained for easy cleaning. Do not use carpet in these areas.

Violation: The deck grouting was in disrepair in front of the deep-fat fryer.

Site: Galley-Deck 9 - Windjammer Hood-Type Potwash Machine
Violation: The drain line discharged at an angle that caused water to splash out of the deck drain and pool on the deck.
Recommendation: Ensure decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas are cleaned as often as necessary.

Site: Galley-Deck 6 - Chops Grille
Violation: The protective coating on two heat lamp bulbs was peeling off. This was corrected before the end of the inspection.
Recommendation: Ensure light bulbs are shielded, coated, or otherwise shatter resistant in areas with exposed food; clean equipment, utensils, and linens; or unwrapped single-service articles and single-use articles. Protect an infrared or other heat lamp against breakage by a shield surrounding and extending beyond the bulb so only the face of the bulb is exposed.

Violation: The light intensity behind the ice machine was less than 110 lux.
Recommendation: Ensure the light intensity is at least 110 lux (10 foot-candles) behind and around mounted equipment, including counter-mounted equipment.

Site: Galley-Deck 5 - Entrance Starboard Side
Violation: The water temperature measured 125F at the handwashing station across from the ice dispenser. The temperature could not be adjusted by the user. This was corrected immediately.
Recommendation: Ensure handwashing sinks are equipped to provide water at a temperature of at least 29.4C (85F) through a mixing valve or combination faucet. For handwashing sinks with electronic sensors and other types of handwashing sinks where users cannot make temperature adjustments, ensure the temperature after the mixing valve does not exceed 49C (120F).

Violation: The dough sheeter belt was frayed along the edges and the seam. This was replaced before the end of the inspection.
Recommendation: Maintain food-contact equipment in good repair and proper adjustment: (1) Equipment must be maintained in a state of repair and condition that meets the materials, design, construction, and operation specifications of these standards.

Violation: Black residue accumulated at the bottom right area of the evaporator panel cover and on the bottom right portion of the water recirculation tray inside the ice machine.
Recommendation: Ensure food-contact surfaces of equipment and utensils are clean to sight and touch.

Violation: The bottoms of the bulkhead panels behind the ice machine protruded away from the bulkhead creating a difficult to clean gap.

Site: Other-Garbage Cold Room
Violation: Multiple bulkhead fasteners were missing or in disrepair throughout the cold room, creating open penetrations. Additionally, the void space was not closed around a pipe penetrating the bulkhead near the door.
Recommendation: Ensure the garbage and refuse storage room is maintained in good repair and kept clean.

Violation: The drain line discharged at an angle that caused water to splash out of the deck drain and pool on the deck.
Recommendation: Ensure black and gray water is discharged to the vessel's wastewater disposal system and does not pool on the deck.
