Violation: Record keeping was excellent throughout all programs on the vessel.

Site: Galley-Deck 5 Beverage Station
Violation: The back flow prevention device on the potable water line, serving the coffee machine, was leaking and water was noted pooling on the deck surface below. This unit was replaced at the time of the inspection.
Recommendation: Ensure that failed backflow prevention units are replaced.

Site: Potable Water-Spa Technical Rooms
Violation: The back flow prevention device intermediate atmospheric vent discharge port was directly connected to the waste drain line on both spa steam generators, defeating the air-gap and visual inspection of the units.
Recommendation: Ensure that air gaps are at least twice the diameter of the delivery fixture opening and a minimum of 3 cm (1 inch). Remove the direct connection between the intermediate atmospheric vent and the drain line.

Site: Potable Water-Engine Room - Potable Water Softeners
Violation: The backwash discharge pipe lines air-gaps that were less that twice the pipe diameter.
Recommendation: Ensure that air gaps are at least twice the diameter of the delivery fixture opening and a minimum of 3 cm (1 inch).

Site: Galley-Deck 5 Breakfast Pantry
Violation: A galley worker was observed utilizing a plastic plate cover, rather than an ice scoop, to retrieve ice from the ice bin. An ice scoop was located in the bin.
Recommendation: Ensure that food employees do not contact exposed, ready-to-eat food with their bare hands and use suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment.

Site: Galley-Deck 5 Breakfast Pantry
Violation: A galley employee was observed utilizing a plate cover, rather than the available ice scoop, to retrieve ice from the ice bin.
Recommendation: Person in charge: Ensure that employees are properly trained in food safety as it relates to their assigned duties.

Site: Galley-Deck 5 Breakfast Pantry
Violation: Several bins of food, such as sliced fruits, individual milk, yogurt, and creamer containers, were held in large bins. Staff stated that the items were under time control and the containers were properly labeled, however, none of the items in this area were listed in the time as a public health control plan.
Recommendation: Ensure that written procedures to ensure compliance with these guidelines is maintained on the vessel and made available to the VSP, upon request. Ensure that all food items in this area are included in the time management plan.

Site: Galley-Pasta Station
Violation: Hot pasta was removed from the steamer and placed in a plastic bin. The bin was placed next to the steamer directly under the potable water line serving the combination oven. Water was observed dripping from the backflow preventer into the pasta. The pasta was discarded. The backflow prevention device was operating normally. The dripping appeared to the result of normal pressure fluctuations.
Recommendation: Ensure that food is not stored: (1) In locker rooms; (2) In toilet rooms; (3) In dressing rooms; (4) In garbage rooms; (5) In mechanical rooms; (6) Under sewer lines that are not continuously sleeve welded; (7) Under leaking water lines, including leaking automatic fire sprinkler heads, or under lines on which water has condensed; (8) Under open stairwells; or (9) Under other sources of contamination from nonfood items such as ice blocks, ice carvings and flowers.

Site: Galley-Pot Wash
Violation: The pressure gauge on the potwash machine measured 12 PSI. The manufactures data plate recommended a pressure of 15-25 PSI.
Recommendation: Ensure that pressure measuring devices that display the pressures in the water supply line for the fresh hot water sanitizing rinse have increments of 7 kilopascals (1 pounds per square inch) or smaller and are accurate to ± 14 kilopascals (± 2 pounds per square inch) in the 100-170 kilopascals (15-25 pounds per square inch) range.

Site: Galley-Deck 5 Hot Line
Violation: A few plate covers were found soiled with food debris and stored as clean. The covers were returned to the dishwash area.
Recommendation: Ensure that food only contacts surfaces of equipment and utensils that are cleaned and sanitized.
