Site: Other-POTABLE WATER SYSTEM - PHOTO LAB
Violation: NO BACKFLOW PREVENTERS WERE INSTALLED ON THE WATER SUPPLY LINES TO THE DEEP SINK IN THE PHOTO LAB.
Recommendation: Specialty backflow preventers are required instead of vacuum breakers when a shutoff or solenoid valve is required after the connection. They must be the type that works under constant pressure. [Corrected during the inspection.]

Site: Other-POTABLE WATER SYSTEM - BUNKER STATION
Violation: PROTECTIVE CAPS ON SHIP'S POTABLE WATER INTAKE LINES DID NOT HAVE THE KEEPER CHAINS SECURED TO THE LINE OR THE ADJACENT BULKHEAD.
Recommendation: Attach keeper chains on ships potable water intake lines protective caps to the pipe or to the adjacent bulkhead.

Violation: THE POTABLE WATER FILTER ON THE WATER SUPPLY LINE HAD NOT BEEN CHANGED SINCE NOVEMBER, 1997.
Recommendation: Change water filters at least annually or more frequently if water conditions are not optimal.

Violation: TWO KNIVES HAD ROUGH UNCLEANABLE HANDLES.
Recommendation: Food-contact surfaces must be constructed of materials that are nontoxic, smooth, corrosion-resistant, nonabsorbent, and durable under conditions of normal use.

Violation: SEVERAL PLASTIC TONGS HAD MELTED ENDS THAT MADE THEM DIFFICULT TO CLEAN.
Recommendation: Food contact surfaces shall be easily cleanable, smooth, and free of breaks, open seams, cracks, chips, pits, and similar imperfections, and free of difficult-to-clean internal corners and crevices and kept in good repair.

Violation: SEALANT WAS CHIPPED ON THE BACK PLATE OF MEAT SLICER CREATING A DIFFICULT TO CLEAN AREA.
Recommendation: Food-contact surfaces also must be easily cleanable and free of difficult-to-clean internal corners, crevices, and fasteners.

Violation: STARBOARD FLIGHT TYPE DISHWASHER HAD THE UPPER FINAL RINSE MANIFOLD INSTALLED BACKWARDS RESULTING IN RIGHT ± 9 INCHES OF CONVEYOR NOT RECEIVING A PROPER SANITIZING SPRAY.
Recommendation: Dishwashing machines shall be properly installed and maintained in good repair. Machines shall be operated in accordance with manufacturers' instructions, and utensils and equipment placed in the machine shall be exposed to all dishwashing cycles.

Violation: FOOD RESIDUE WAS NOTED AROUND THESE ROUGH AREAS ON THE TONGS.
Recommendation: Food contact surfaces of equipment shall be thoroughly washed, rinsed and sanitized after each use and prior to storage. Any items which are found to be soiled after being washed, must be returned to the warewashing area for immediate re-washing.

Recommendation: Non-food contact surfaces of equipment shall be cleaned as often as is necessary to keep the equipment free of accumulation of dust, dirt, food particles, and other debris.

Violation: JUICE MACHINE HAD OLD FOOD RESIDUE IN A SPLASH AREA BEHIND JUICE DISPENSING NOZZLES.
Recommendation: Non-food contact surfaces of equipment shall be cleaned as often as is necessary to keep the equipment free of accumulation of dust, dirt, food particles, and other debris.

Violation: PPE CABINET WAS NOT SEALED TO THE BULKHEAD.
Recommendation: Equipment attached to bulkhead should be sealed to the bulkhead to prevent difficult to clean areas and to prevent possible harborage for roaches.

Violation: A PROFILE STRIP AT THE STARBOARD BULKHEAD / KETTLE PEDESTAL JUNCTURE ON THE STARBOARD SIDE WAS LOOSE. EXCESSIVE AND ROUGHLY FINISHED SEAM SEALANT WAS ALSO NOTED IN THIS AREA. THESE CONDITIONS MAKE IT DIFFICULT TO CLEAN THIS AREA. [ CORRECTED DURING INSPECTION.]
Recommendation: Decks, bulkheads, and deckheads in food preparation, warewashing, and storage areas, including pantries, shall be designed and constructed for easy cleanability, shall be corrosion-resistant, maintained in good repair, and kept clean.

Site: Other-MAIN GALLEY - SOUP KITCHEN
Violation: OLD SPILLS AND ACCUMULATED FOOD RESIDUE WAS NOTED ALONG THE DECK / BULKHEAD JUNCTURE THROUGHOUT THE KETTLE AREA OF THE SOUP KITCHEN AND ADJACENT AREAS OF THE HOT GALLEY.
Recommendation: Galleys require thorough cleaning procedures to maintain them in a sanitary condition. Recommend assigning specific responsibilities to crew for specific areas of the galley. Detail cleaning methods, equipment and materials in the instructions. Follow up is suggested to make sure that -all- areas have been cleaned on a routine basis.
