Violation: ROAST BEEF ON THE BACKUP FOR THE BUFFET WAS FOUND AT 106 - 112 F. PRODUCT WAS IMMEDIATELY REHEATED.
Recommendation: After being cooked or prepared, potentially hazardous foods either must be properly refrigerated in a unit with an air temperature at or below 40F (4.5C) or remain heated at or above 140F (60C). Institute a organized frequent monitoring program (HACCP) for potentially hazardous food temperatures to verify critical temperatures are maintained or appropriate corrective actions have been taken.

Recommendation: Arrange utensils for free draining and air flow between when put into storage or add additional clean storage racks to facilitate air drying.

Violation: FOOD SOIL WAS NOTED ON SOME PLASTIC STORAGE BINS AND ON BAKING SHEET PANS FOUND IN THE CLEAN UTENSIL RACKS IN THE POT WASH.
Recommendation: To prevent cross-contamination, pots, pans, utensils and other food contact surfaces of equipment shall be thoroughly washed, rinsed and sanitized after each use and prior to storage. Any items which are found to be soiled after being washed, must be returned to the warewashing area for immediate re-washing.
