Violation: RECOMMEND THAT SELF SERVICE UTENSILS SUCH AS TONGS OR FORKS WITH LONGER HANDLES BE USE ON THE BUFFET LINE FOR THE SERVING OF ALL FOODS IN PARTICULAR FOR THE SMOKED SALMON AND CHEESE THAT WAS BEING OFFERED TODAY. THE DINING SIZE FORKS BEING USED COULD RESULT IN THE HANDLE OF THE UTENSIL FALLING INTO THE FOOD.

Violation: A DENTED CAN OF POTATOES WAS FOUND IN THE GRILL STATION AREA.
Recommendation: 7.3.2.2.5 Food packages shall be in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants. Canned goods with dents on end or side seams may not be used.

Violation: IT IS REQUIRED THAT TEMPERATURE MEASURING DEVICES BE PLACED IN THE WARMEST PART OF REFRIGERATION UNITS. MOST OF THE THERMOMETERS IN THE REFRIGERATION UNITS THROUGHOUT THE MAIN GALLEY WERE PLACED IN THE COOLEST PART OF THOSE UNITS.
Recommendation: 7.4.3.4.1 Food temperature measuring devices shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperatures.

Violation: THE POTWASH MACHINE WAS POSTED OUT OF ORDER.
Recommendation: Ensure that all equipment that is posted out of order is repaired, replaced or removed.

Violation: THE PRESSURE GAUGE WAS NOT EASILY READABLE DUE TO HEAVY CONDENSATION BUILDUP ON THE INSIDE OF THE GLASS COVER.
Recommendation: Ensure the pressure gauge is easily readable at all times.

Violation: THE PLATE SURFACE TEMPERATURE ON THE INBOARD FLIGHT TYPE DISHWASHER WAS MEASURED THREE TIMES. THE MEASUREMENTS REVEALED TEMPERATURES OF 142F, 158F, AND 152F, RESPECTIVELY. A TEMPERATURE OF 168F WAS MEASURED AT THE MANIFOLD. THE MACHINE WAS IN ACTIVE USE AT THE TIME THE TEMPERATURES WERE TAKEN AND WAS THE ONLY MACHINE WORKING IN THE MAIN GALLEY. THE GLASSWASH MACHINE AND THE OUTBOARD FLIGHT TYPE DISHWASHER WERE POSTED OUT OF ORDER. THE INBOARD MACHINE WAS TAKEN OUT OF SERVICE FOR REPAIRS. THIS WAS CORRECTED DURING THE INSPECTION. TEMPERATURE CHECKS OF THE TWO DISHWASH MACHINES AND THE GLASSWASH MACHINE REVEALED TEMPERATURES AT THE PLATE SURFACE OF ABOVE 160F.
Recommendation: 7.5.6.1.2 In a mechanical operation, the temperature of the fresh hot water sanitizing rinse as it enters the manifold may not be more than 90C (194F), or less than: (1) For a stationary rack, single temperature machine, 74C (165F); or (2) For all other machines, 82C (180F). (3) A utensil surface temperature of 71C (160F) as measured by an irreversible registering temperature indicator shall be achieved. (4) The maximum temperature of 90C (194F), does not apply to the high pressure and temperature systems with wand-type, hand-held, spraying devices used for the in-place cleaning and sanitizing of equipment such as meat saws.

Violation: THE VENTILATION HOOD AREA ABOVE THE ROTISSERIE OVEN WAS HEAVILY SOILED WITH GREASE THAT HAD BECOME HARDENED AND NOT EASILY REMOVABLE.
Recommendation: 7.5.5.1.3 Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Recommendation: 7.5.7.3.2 Clean equipment and utensils shall be stored: (1) In a self-draining position that allows air drying; and (2) Covered or inverted.

Violation: PEELING SEALANT AND GAPS WERE NOTED ON THE BULKHEADS AND DECKHEADS THROUGHOUT THE FOOD SERVICE AREAS.
Recommendation: 7.7.4.1.1 Decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas shall be constructed and maintained for easy cleaning.
