Violation: IN DEVELOPING THE CORRECTIVE ACTION STATEMENT FOR THIS INSPECTION, CRITICAL-ITEM DEFICIENCIES (DESIGNATED WITH YES IN CRITICAL COLUMN (WORTH 3 - 5 POINTS), WHETHER DEBITED OR NOT, SHOULD INCLUDE STANDARD OPERATING PROCEDURES AND MONITORING PROCEDURES IMPLEMENTED TO PREVENT THE RECURRENCE OF THE CRITICAL DEFICIENCY. Site: Other-GENERAL COMMENT
Violation: THE RECORD KEEPING OF THE POTABLE WATER SYSTEM AND THE POOLS AND SPAS WAS OUTSTANDING. THE CROSS CONNECTION CONTROL PLAN WAS ONE OF THE MOST THOROUGH THAT I HAVE SEEN.

Site: Other-POTABLE WATER
Violation: THE POTABLE WATER, FAR POINT ANALYZER WAS OUT OF CALIBRATION. THE ANALYZER WAS READING 0.77 PPM FREE CHLORINE AND THE MANUAL TEST INDICATED 0.38 PPM FREE CHLORINE. THE SHIP'S MANUAL TEST KIT WAS PROGRAMMED TO READ ON A 0-5 PPM SCALE AND AT THIS SCALE THE ANALYZER WAS WITHIN 0.01 PPM. HOWEVER, THIS UPPER SCALE IS DESIGNED TO MEASURE TOTAL CHLORINE AND NOT FREE AND THEREFORE NOT ACCURATE FOR CALIBRATING THE ANALYZER. THE TEST KIT WAS RE-PROGRAMMED AND THE ACCURACY WAS CONSISTENT WITH THE READINGS OF THE INSPECTOR'S TEST KIT.
Recommendation: 5.5.1.2.3 The free residual halogen measured by the halogen analyzer shall be 0.2 mg/L (ppm) of the free residual halogen measured by the manual test.

Violation: THE SHIP'S MANUAL TEST KIT WAS PROGRAMMED TO READ ON A 0-5 PPM SCALE AND AT THIS SCALE THE ANALYZER WAS WITHIN 0.01 PPM. HOWEVER, THIS UPPER SCALE IS DESIGNED TO MEASURE TOTAL CHLORINE AND NOT FREE AND THEREFORE NOT ACCURATE FOR CALIBRATING THE ANALYZER. THE TEST KIT WAS RE-PROGRAMMED AND THE ACCURACY WAS CONSISTENT WITH THE READINGS OF THE INSPECTOR'S TEST KIT.
Recommendation: Ensure that the manual halogen test kit is operated in the appropriate range, and that it is calibrated periodically, recommend at least monthly to ensure accuracy. Calibration standards were not available onboard at the time if the inspection.

Site: Other-SWIMMING POOLS AND WHIRLPOOL SPAS
Violation: THE MANUAL HALOGEN TEST KIT WAS NOT ACCURATE FOR MEASURING THE HALOGEN RESIDUALS IN THE SWIMMING POOLS AND WHIRLPOOL SPAS. NO SWIMMING POOLS WERE OPEN AT THE TIME OF THE INSPECTION BUT A WHIRLPOOL SPA WAS OPEN. THE HALOGEN RESIDUAL IN THE SPA WAS WITHIN THE REQUIRED 3-10 PPM FREE CHLORINE. THIS WAS DETERMINED BY USING A DILUTION METHOD TO TEST WITH THE INSPECTOR'S TEST KIT.
Recommendation: Ensure that the onboard halogen test kits are operated in the free halogen (low) range.

Site: Other-WINDJAMMER BUFFET
Violation: THE "TIME AS A PUBLIC HEALTH CONTROL" PLAN DID NOT SPECIFICALLY LIST THE INDIVIDUAL YOGURTS AND MILKS AS BEING ON TEMPERATURE CONTROL. WHILE THE FOOD SERVICE OPERATION WAS NO LONGER IN PROGRESS AND THERE WAS NO FOOD LEFT ON THE BUFFETS THE INFORMATION WAS GATHERED AFTER READING THE TIME MANAGEMENT PLAN AND ASKING THE MANAGERS IF THE ABOVE ITEMS WERE ON "TIME OR TEMPERATURE CONTROL".
Recommendation: Include the yogurt and milk on the time management plan or modify the plan adding the exception of these items from the plan.

Violation: THE BELT ON THE DOUGH ROLLER WAS BEGINNING TO FRAY ALONG THE EDGES.
Recommendation: 7.4.2.2.1 Multiuse food-contact surfaces shall be: (1) Smooth; (2) Free of breaks, open seams >1 mm (1/32 inch), cracks, chips, inclusions, pits, and similar imperfections; (3) Free of sharp internal angles, corners, and crevices; (4) Finished to have smooth welds and joints.

Site: Other-ROOM SERVICE PANTRY - DECK 4
Violation: THE AMBIENT TEMPERATURE WAS 44F. THIS UNDERCOUNTER REACH-IN SHOULD BE 41F OR BELOW.
Recommendation: 7.4.3.1.1 Equipment for cooling and heating food, and holding cold and hot food, shall be sufficient in number and capacity to maintain specified potentially hazardous food temperatures.

Site: Other-WINDJAMMER BUFFET
Violation: THERE WAS A CONTAINER OF CARPET STAIN REMOVER STORED IN THE CLEANING LOCKER BEHIND THE BUFFET LINE. WHILE THIS PRODUCT IS USED TO CLEAN THE CARPET IN THE ADJACENT AND CONNECTED SEATING AREA IT SHOULD BE STORED OUTSIDE OF THE FOOD PREPARATION AREA. THE PRODUCT WAS REMOVED AND STORED IN A LOCKER OUTSIDE OF THE FOOD PREP AREA.
Recommendation: 7.6.2.2.1 Only poisonous or toxic materials that are required for the operation and maintenance of food areas of the vessel, such as for the cleaning and sanitizing of equipment and utensils and the control of insects and rodents, shall be allowed in the food areas of the vessel.
