Site: Potable Water-Potable Water Tanks
Violation: In the history for maintenance of one potable water tank, it indicated that some surfaces had been sanded and touched up with paint. There was no indication in the record of the paint used or if the manufacturer's guidelines for drying/curing had been followed.
Recommendation: Ensure that interior coatings on potable water tanks are approved for potable water contact, and all manufacturer's recommendations for application, drying, or curing are followed. Ensure written documentation for the coating used and recommendations followed are available for review during inspections.

Site: Potable Water-Cross-Connection Control Program
Violation: The program did not indicate the type of device located on the deck taps. The device was acceptable.
Recommendation: Ensure that the cross-connection control program includes at minimum: a complete listing of cross-connections and the backflow prevention method/device for each, so that there is a match to the plumbing system component and location, and an inspection frequency. Ensure that air-gaps are included in the listing.

Site: Potable Water-Cross-Connection Control Program
Violation: There was no annual test completed on the reduced pressure assembly connected between the reverse osmosis unit and the feed water system. After the reduced pressure assembly, the water can be directed to either the feed water system or the technical water system. There was an air gap before the technical water system, but not before the feed water system. The engineer explained that the water was normally directed to the technical water system, but it can be directed to the feed water system.
Recommendation: Ensure that backflow prevention devices requiring testing, for example reduced pressure backflow preventer and double check valves with test cocks, are inspected and tested with a test kit at least annually and that the test results showing the pressure differences on both sides of the valves are maintained for each device. Ensure the device is tested annually or remove all piping to the feed water system.

Site: Potable Water-Lido Beverage Station
Violation: There was no backflow prevention device on the potable water line to the espresso machine.
Recommendation: Install a continuous pressure-type backflow prevention device.

Site: Galley-Time as a Public Health Control Plan
Violation: The flow charts for the plan for both hot and cold food stated food from the main galley went from temperature to time control when it was sent to the lido galley. The next box on the flow chart stated that the food went from temperature to time control when it went out to the service line. It was unclear at which point food from the main galley went on time control. The flow charts were corrected during the inspection.
Recommendation: Ensure that the time control plan is clear and accurate, and reflects the vessel's operations.

Violation: The top panel of the drain compartment below the fryer was soiled.
Recommendation: Ensure that nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: There was condensation collected on the exhaust hood above the soiled end of the conveyor dishwash machine and the back of the adjacent ice machine.
Recommendation: Ensure that ventilation hood systems and devices are sufficient in number and capacity to prevent grease or condensation from collecting on bulkheads and deckheads.

Site: Galley-Deck 4 Soup Station
Violation: There was condensate dripping from a light box in the exhaust hood to the non-tilting steam kettle at the galley entrance.
Recommendation: Ensure that exhaust ventilation hood systems in food preparation and warewashing areas including components such as hoods, fans, guards, and ducting are designed to prevent grease or condensation from draining or dripping onto food, equipment, utensils, linens, and single-service and single-use articles.

Site: Housekeeping-Spa
Violation: There was no means to exit the toilet rooms in the changing rooms without touching the door handle with bare hands.
Recommendation: Equip public toilet facilities so that persons exiting the toilet room are not required to handle the door with bare hands. This may be accomplished by methods such as locating paper towel dispensers at sinks and waste containers near the room door, installing mechanically operated doors, door removal, or other effective means.
