Site: Galley-MINI GALLEY - COLD PANTRY
Violation: TWO LARGE PLATTERS OF SLICED CHEESES WERE FOUND INSIDE UNDERCOUNTER REACH-IN REFRIGERATOR #165 WITH PRODUCT TEMPERATURES BETWEEN 58 AND 60 F. BOTH TRAYS WERE REMOVED IMMEDIATELY AND SENT TO THE BLAST CHILLER.
Recommendation: Ensure that potentially hazardous food is maintained: (1) At 60C (140F) [roasts 54C (130F)] or above, or (2) At 5C (41F) or less.

Site: Other-POOL GRILL - SERVICE COUNTER
Violation: THE THREE SANDWICH TOPPINGS WERE ON LONG TRAYS SETTING ON MOUNDED ICE IN THE COLD TOP OF THE SERVICE COUNTER. THE SLOPING ANGLE AND LENGTH OF THE TRAYS CAUSED THE SERVING TONGS TO SLIDE OF THE TRAYS AND ONTO THE COUNTERTOP. PIECES OF TOPPING WERE ALSO FALLING ON THE COUNTER AND BOTH THE HANDLE AND FOOD-CONTACT SURFACES WERE BECOMING CONTAMINATED.
Recommendation: Re-work the tray setup so tongs are stationary and protected from contamination.

Violation: FROZEN CONDENSATE WAS NOTED ON THREE BOXES OF FROZEN SPINACH.
Recommendation: Ensure that food is protected from contamination by storing the food: (1) In a clean, dry location; (2) Where it is not exposed to splash, dust, or other contamination; and (3) At least 15 centimeters (6 inches) above the deck.

Violation: THE HOT DOG AND HAMBURGER BUNS WERE STORED IN OPEN AND UNSHIELDED CHAFING DISHES FOR PASSENGER SELF-SERVICE AT THE FRONT COUNTER.
Recommendation: Ensure that food on display is protected from contamination by the use of packaging; counter, service line, or salad bar food guards; display cases; or other effective means.

Violation: THE ICE SCOOP FOR DRINK SERVICE WAS STORED IN A CONTAINER FILLED WITH A CHLORINE SANITIZING SOLUTION OF 150 PPM BETWEEN USES.
Recommendation: The ice scoop may be stored in the same cup without sanitizer, so long as the cup is maintained clean and set where it is not exposed to other conamination sources.

Violation: SOME CUTTING BOARDS WERE FOUND WITH NICKED EDGES AND SOME WERE SCORED ON THE FOOD CONTACT SURFACES, MAKING CLEANING DIFFICULT.
Recommendation: Ensure that surfaces such as cutting blocks and boards that are subject to scratching and scoring are resurfaced if they no longer can be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.

Violation: SLOTTED FASTENERS WERE FOUND ON SEVERAL DEEP FAT FRYER COIL MOUNTS.

Violation: A LARGE, PREVIOUSLY CLEANED SKILLET WAS SET ON THE INDUCTION COOK TOP FOR USE. THE NON-STICK COATING IN THE PAN WAS HEAVILY SCRATCHED AND SCORCHED TO A POINT THAT IT WAS DIFFICULT TO DETERMINE IF IT WAS CLEAN. THE BASE METAL LAYER WAS VISIBLE THROUGH OTHER SECTIONS OF THE FOOD CONTACT SURFACE.
Recommendation: Discard the skillet.

Violation: PEELING LABELS WERE NOTED ON SOME TILTING PANS.
Recommendation: Remove or repair/replace the peeling labels.

Site: Galley-CREW GALLEY - DISHWASH AREA
Violation: ONE OF THE NOZZLES ON THE UPPER FINAL RINSE SPRAY ARM OF THE CONVEYOR DISHWASHER HAD AN ERRATIC SPRAY PATTERN. IN ADDITION, AN EXCESSIVE AMOUNT OF WATER WAS NOTED LEAKING FROM THE MANIFOLD CONNECTION FOR THE SPRAY ARM. UPON EXAMINATION OF THE CONNECTION, A DEFECTIVE RUBBER GASKET WAS IDENTIFIED AND REPLACED. THESE ITEMS WERE CORRECTED DURING THE INSPECTION.
Recommendation: Make the necessary repairs to the diswash machine to ensure the spray rinse is fully functioning.

Violation: THE HOT WATER SANITIZING SINK WAS IN-USE AND HAD A WATER TEMPERATURE OF 188 F, WHILE THE MOUNTED GAUGE THERMOMETER DISPLAYED 202 F.
Recommendation: Ensure that water temperature measuring devices: (1) That are scaled in Celsius or dually scaled in Celsius and Fahrenheit are designed to be accurate to 1.5C in the intended range of use. (2) That are scaled only in Fahrenheit are designed to be accurate to 3F in the intended range of use.

Violation: THE DECK BENEATH THE DRINK COUNTER WAS SOILED WITH FOOD DEBRIS. IT APPEARED THAT THE FOOD DEBRIS WAS GREATER THAN ONE DAY OLD. THE DECK INSIDE ONE OF THE TECHNICAL COMPARTMENTS HOUSING THE USED COFFEE GRIND CONTAINERS WAS SOILED. SINCE THE USED COFFEE GROUND CONTAINERS ARE FIXED TO THE DECK, IT IS DIFFICULT FOR GALLEY PERSONNEL TO ADEQUATELY CLEAN THE DECK BEHIND THEM.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning.

Violation: SEVERAL SHIELDED LIGHT BULBS (APPROXIMATELY 14) OVER THE BUFFET LINES WERE NOT WORKING. THESE BULBS WERE REPLACED DURING THE INSPECTION.
Recommendation: Ensure that the light intensity is at least 220 Lux (20 foot candles) on food preparation surfaces, and at a distance of 75 centimeters (30 inches) above the deck in food preparation areas, handwashing facilities, warewashing areas, equipment, and utensil storage, pantries, toilet rooms, and consumer self-service areas.

Site: Integrated Pest Management-INTEGRATED PEST MANAGEMENT (IPM)- PLAN
Violation: THE WRITTEN IPM PLAN FROM SEPTEMBER 2004 IS INCOMPLETE IN ADDRESSING PESTS WHICH ARE BEING MONITORED BY THE ONBOARD STAFF. THE IPM PLAN DOES NOT SPECIFICALLY DESCRIBE ACTIVE PEST MONITORING REQUIREMENTS; IT ONLY REQUIRES THAT PEST SIGHTINGS BE RECORDED ON A LOG FORM. SHIP PEST TECHNICIAN'S ACTUALLY CONDUCT ACTIVE MONITORING INSPECTIONS FOR LIVE PESTS WHEN CHECKING THE BAITS AND TRAPS PLACED IN AREAS WHERE PESTS MAY BE PRESENT. THERE IS NO ACTION SPECIFIED FOR RODENTS IN THE PLAN, BUT STAFF STATED THAT THEY USE RAT GUARD DEVICES ON THE SHIP'S MOORING LINES FOR EXCLUSION AT EVERY PIER WHEN DOCKED, AND THE PEST TECHNICIAN INSPECTS WHENEVER PROVISIONS OR SUPPLIES ARE BROUGHT TO THE SHIP. THERE IS NO REQUIREMENT IN THE PLAN FOR ADDRESSING FRUIT AND DRAIN FLIES, BUT STAFF STATED THAT THE TECHNICIAN'S DO FIND THEM FROM TIME TO TIME AND DO INSPECTIONS FOR THEM AND FOR BREEDING AREAS. THE PLAN HAS AN APPENDIX WHICH DESCRIBES BIOLOGY AND CONTROL STRATEGIES FOR VARIOUS PESTS WHICH MAY IMPACT CRUISE SHIPS, BUT IT IS INFORMATIONAL ONLY. THE IPM PLAN SPECIFIES CERTAIN NAMED FORMS BE USED FOR RECORDING DATA, BUT THE FORMS PROVIDED HAVE DIFFERENT NAMES (SIGHTING LOG SERVICE REQUEST, PESTICIDE APPLICATION LOG, AND MONITOR INSPECTION LOGS). THIS IS A REPEAT ITEM FROM THE 19 DECEMBER 2004 INSPECTION.
Recommendation: Update the written IPM plan with clear requirements for active monitoring inspections for live pests in the operational areas of the ship. Include a description of required actions (exclusion, passive surveillance, or active surveillance) for the pests the ship monitors for, including rodents and fruit or drain flies. Make all documentation forms consistent or describe which form matches the form named in the plan. All of the above items can be accomplished by adding an addendum page to the existing plan if desired.
