Item No.: 19
Site: Provisions-Dry Stores
Violation: During loading, the soiled feet of a deck stand were leaning against a box of cereal.
Recommendation: Protect food from contamination by storing the food: (1) Covered or otherwise protected; (2) In a clean, dry location; (3) Where it is not exposed to splash, dust, or other contamination; and (4) At least 15 centimeters (6 inches) above the deck.

Site: Other-Engine Control Room
Violation: A slotted fastener was in the food contact zone of the filter on the espresso machine. This was corrected immediately.,
Recommendation: Use only low profile, nonslotted, noncorroding, and easy-to-clean fasteners on food-contact surfaces and in splash zones. Prohibit the use of exposed slotted screws, Phillips head screws, or pop rivets in these areas.

Site: Galley-Preparation Area
Violation: The water in a sanitizer bucket beside espresso cooler 873 was cloudy. The area was open for service.
Recommendation: Ensure the wash, rinse, and sanitize solutions are maintained clean.

Site: Food Service General-Hot Galley
Violation: The water and steam from combination oven FZ444QFA433 was dripping onto the top of the lower door and puddling on the surface.
Recommendation: Store cleaned equipment and utensils, laundered linens, and single-service and single-use articles: (1) in a clean, dry location; (2) in a location where they are not exposed to splash, dust, or other contamination; (3) at least 150 millimeters (6 inches) above the deck.

Site: Bar-Cove Cafe
Violation: There was a two cm gap around the deckhead-mounted smoke detector leading into the plenum above the front preparation counter over the juice containers. The gap appeared clean.
Recommendation: Ensure decks, bulkheads, and deckheads in food preparation, warewashing, pantries, bars, and food and equipment storage areas are constructed and maintained for easy cleaning.

Site: Galley-Promenade
Violation: The drain under the small preparation sink adjacent to espresso unit 3112 contained approximately 1.5 cm of standing water inside the coming under the sink. A pink slimy substance was also standing in the water. The area was not in service. Staff produced a work order that had been placed before the inspector entered the ship. The drain was later reported as repaired.
Recommendation: Ensure decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas are cleaned as often as necessary.

Violation: The drain for the handwash link was clogged and backed up in the scupper. The area was not open.
Recommendation: Ensure a plumbing system in a food area is maintained in good repair.

Violation: A steam hand valve was leaking water onto the deck in the technical space adjacent to panel ESP 15801. The bain marie was operational however no food was present at the time of inspection. This was reported as repaired.
Recommendation: Ensure a plumbing system in a food area is maintained in good repair.

Site: Galley-Hot Galley
Violation: A significant amount of steam was vented from combination oven FZ444QFA433 into the deckhead space directly above the unit. The steam was directed in such a manner that caused water to condense on the bulkhead and drip and puddle on the top of the machine and drip down onto the door of the lower unit.
Recommendation: Ensure ventilation hood systems and devices operate effectively to prevent grease and condensate from collecting on the bulkheads and deckheads and remove contaminants generated by equipment located under them.

Site: Bar-Pool
Violation: During embarkation, three fruit flies were on the serving counter of this outside bar.
Recommendation: Effectively control the presence of insects, rodents, and other pests to minimize their presence in the food storage, preparation, and service areas and warewashing and utensil storage areas aboard a vessel.
