Site: Buffet-Deck 12 Terrace Cafe
Violation: At the central island cold buffet, one consumer advisory for smoked salmon and herring did not state that the fish were served raw or undercooked. Staff immediately removed the sign and replaced it with one that met the requirements.
Recommendation: Ensure the consumer advisory is made on a sign describing the animal-derived foods (e.g., ?oysters on the half-shell,? ?hamburgers,? ?steaks,? or ?eggs?); AND that they can be cooked to order or may be served raw or undercooked; AND a statement indicating that consuming raw or undercooked meats, seafood, shellfish, eggs, milk, poultry may increase your risk for foodborne illness, especially if you have certain medical conditions.

Site: Provisions-Deck 4 Fish Freezer
Violation: Three whole, frozen halibuts were stored uncovered and not protected on top of cardboard boxes.
Recommendation: Protect food from contamination by storing the food: (1) Covered or otherwise protected; (2) In a clean, dry location; (3) Where it is not exposed to splash, dust, or other contamination; (4) At least 150 millimeters (6 inches) above the deck; (5) At least 127 millimeters (5 inches) for food in packages and working containers on pallets, skids, and racks; and (6) At least 150 millimeters (6 inches) above the deck on shelving racks.

Site: Medical-Deck 4 Beverage Storage
Violation: Two cardboard boxes of powdered drink packets were stored on the deck. Staff stated the product has just been received the day of the inspection. Additionally, there were four boxes of 24 cans each (total of approximately 96 cans) of club soda stored on the deck under the patient reception desk. The inspector and staff discussed ensuring all food is stored off the deck.
Recommendation: Protect food from contamination by storing the food: (1) Covered or otherwise protected; (2) In a clean, dry location; (3) Where it is not exposed to splash, dust, or other contamination; (4) At least 150 millimeters (6 inches) above the deck; (5) At least 127 millimeters (5 inches) for food in packages and working containers on pallets, skids, and racks; and (6) At least 150 millimeters (6 inches) above the deck on shelving racks.

Site: Galley-Deck 12 Portside Beverage Station
Violation: The counter-mounted coffee machine was not sealed to the countertop which created a gap and a difficult to clean surface.
Recommendation: Ensure nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance. Ensure equipment that is fixed because it is not easily movable is installed so that it is: (1) Spaced from adjoining equipment, bulkhead, and deckhead at a distance of not more than 0.8 millimeter or 1/32 inch; or (2) Sealed to adjoining equipment or bulkhead.

Site: Galley-Deck 12 Potwash
Violation: One previously cleaned and sanitized coffee pot was visibly soiled and stored in the clean area of the potwash. The inspector wiped an alcohol pad on the inside surface and it became soiled with brown debris.
Recommendation: Ensure food contact surfaces of equipment and utensils are clean to sight and touch.

Site: Buffet-Deck 12 Cold Buffet Center Island
Violation: The cabinet/deck juncture coving near the corner of the small box cereal display was damaged and in disrepair, which made it rough and difficult to clean.
Recommendation: Ensure decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are maintained in good repair.

Violation: Water was dripping from the deckhead and pooling on the deck across from the entryway condenser unit.
Recommendation: Ensure decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas are cleaned as often as necessary.

Site: Provisions-Deck 3 Beverage Locker
Violation: Water was dripping from the deckhead and pooling on the deck across from the entryway condenser unit. Staff stated the water was from an insulated refrigeration pipe.
Recommendation: Ensure heating, ventilating, and air conditioning systems are designed and installed so that make-up air intake and exhaust vents do not cause contamination of food, food-contact surfaces, equipment, or utensils.

Site: Galley-Deck 5 Pastry
Violation: One live, small fly was near the counter mounted mixers.
Recommendation: Effectively control the presence of insects, rodents, and other pests to minimize their presence in the food storage, preparation, and service areas and warewashing and utensil storage areas aboard a vessel.
