Item No.: 10
Site: Recreational Water Facilities-Deck 7 - Whirlpool
Violation: The safety sign at the starboard entrance to the whirlpool was missing.
Recommendation: Provide safety signs for all RWFs, except for baby-only water facilities. Ensure the signs, at a minimum, include the following words: (1) do not use these facilities if you are experiencing diarrhea, vomiting, or fever; (2) no children in diapers or who are not toilet trained; (3) shower before entering the facility; and (4) bather load #. For children?s RWF signs, include the exact wording ?TAKE CHILDREN ON FREQUENT BATHROOM BREAKS? or ?TAKE CHILDREN ON FREQUENT TOILET BREAKS.? In addition to the safety sign requirements in section 6.8.1.1.1, install a sign at each whirlpool spa and spa pool entrance listing precautions and risks associated with the use of these facilities. Include, at a minimum, cautions against use by the following: (1) individuals who are immunocompromised; (2) individuals on medication or who have underlying medical conditions such as cardiovascular disease, diabetes, or high or low blood pressure; and (3) pregnant women, elderly persons, and children. Additionally, caution against exceeding 15 minutes of exposure. Those under 16 years of age are considered children for the purpose of whirlpool safety sign requirements.
Item No.: 20
Site: Galley-Deck 3 - Bakery
Violation: The dough sheeter belt had loose strings along the edges, making cleaning difficult.
Recommendation: Materials used in the construction of multiuse utensils and food contact surfaces of equipment must be: (1) durable, corrosion resistant, and nonabsorbent; (2) sufficient in weight and thickness to withstand repeated warewashing; (3) finished to have a smooth, easily cleanable surface; and (4) resistant to pitting, chipping, crazing, scratching, scoring, distortion and decomposition. Design and construct food contact surfaces of equipment and utensils to be durable and to retain their characteristic qualities under normal use conditions.
Item No.: 33
Site: Galley-Deck 3 - Dishwash Area
Violation: When the rack-type dishwash machine was in operation, excess steam escaped the area. There was no canopy exhaust overhang to direct the steam to the exhaust vent above the clean landing. Condensate formed on the deckhead and bulkhead at the clean end of the machine, and on the deckhead profile strip above the clean end of the glasswash machine.
Recommendation: Ensure decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas are cleaned as often as necessary.
Item No.: 33
Site: Provisions-Deck 3 - Ice Cream Freezer
Violation: The deckhead light cover immediately inside the freezer had frozen condensate inside.
Recommendation: Ensure decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas are cleaned as often as necessary.
Item No.: 33
Site: Galley-Deck 6 - Cuadro 44
Violation: Water dripped from the deckhead light above the stairs onto the deck leading into the galley.
Recommendation: Ensure decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas are cleaned as often as necessary.
Item No.: 36
Site: Galley-Deck 8 - Star Grill (Portside)
Violation: The coating on the right-side heat lamp was peeling, which made it no longer shatter-resistant.
Recommendation: Ensure light bulbs are shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, and linens, or unwrapped single-service and single-use articles.
Item No.: 36
Site: Galley-Deck 3 - Hot Line
Violation: The light intensity measured less than 220 lux throughout the hot line counter.
Recommendation: Ensure the light intensity is at least 220 lux (20 foot candles) on food preparation surfaces, and at a distance of 75 centimeters (30 inches) above the deck in food preparation areas, handwashing facilities, warewashing areas, equipment, and utensil storage, pantries, toilet rooms, and consumer self-service areas.
Item No.: 36
Site: Galley-Deck 3 - Potwash Area
Violation: The light intensity measured less than 110 lux behind the hood-type potwash machine.
Recommendation: Ensure the light intensity is at least 110 lux (10 foot candles) at a distance of 75 centimeters (30 inches) above the deck when in use, in walk-in refrigerator units and dry storage areas, and in other areas and rooms during periods of cleaning. Ensure the light intensity is at least 110 lux (10 foot candles) behind and around mounted equipment, including counter-mounted equipment.
Item No.: 37
Site: Galley-Deck 3 - Dishwash Area
Violation: The rack-type dishwash machine was missing a canopy exhaust overhang above the clean landing. Condensate formed on the deckhead and bulkhead at the clean end of the machine, and on the deckhead profile strip above the clean end of the glasswash machine.
Recommendation: Ensure ventilation hood systems and devices are sufficient in number and capacity to prevent grease or condensation from collecting on bulkheads and deckheads. Ensure all food preparation, warewashing, and toilet rooms have sufficient ventilation to keep them free of excessive heat, steam, condensation, vapors, obnoxious odors, smoke, and fumes. Ensure ventilation hood systems and devices operate effectively to prevent grease and condensate from collecting on the bulkheads and deckheads and remove contaminants generated by equipment located under them.
