Site: Potable Water-
Violation: A REVIEW OF THE CHARTS FOR THE POTABLE WATER DISTRIBUTION SYSTEM NOTED THAT SINCE 11/11/05, WHEN THE VESSEL BEGAN ITS RETURN TO U.S. WATERS, THERE WERE 8 DAYS WHERE NO CALIBRATION CHECK WAS RECORDED, 1 DAY WHERE THE CHART DID NOT CONTAIN CALIBRATION, DATE, OR INITIALS, AND TWO OCCASIONS WHERE THE CHART REMAINED IN THE RECORDER FOR 2 DAYS.
Recommendation: Ensure that the calibration is recorded on the chart or in a log book. Ensure that halogen analyzer-chart recorder charts are changed, initialed, and dated daily and contain notations of any unusual water events in the potable water system.

Site: Potable Water-
Violation: SAMPLES FOR THE MONTHLY MICROBIOLOGICAL TESTING OF THE POTABLE WATER SYSTEM WERE TAKEN AT THE SAME LOCATIONS EACH MONTH.
Recommendation: Ensure that a minimum of four potable water samples per month are collected and analyzed for the presence of Escherichia coli and are collected from locations forward, aft, upper, and lower decks of the vessel. Sample sites shall be changed each month in order to obtain a good representation of the potable water distribution system.

Site: Potable Water-DECK 4 MAIN GALLEY AND LIDO BEVERAGE STATIONS
Violation: THE VENTS FOR THE STAINLESS STEEL BACKFLOW PREVENTION DEVICES FOR THE CARBONATORS WERE NOT ORIENTED IN A DOWNWARD DIRECTION. THESE WERE CORRECTED DURING THE INSPECTION.
Recommendation: Direct the vents downward.

Site: Buffet-
Violation: THERE WAS A TRAY OF PREPACKAGED MILK AND A TRAY OF PREPACKAGED YOGURT IN AN UNDERCOUNTER REFRIGERATOR AT THE BUFFET LINE. THE REFRIGERATION UNIT WAS MEASURED AT 55F AND A PACKAGE OF YOGURT WAS MEASURED AT 50F. THE BUFFET HAD BEEN CLOSED FOR APPROXIMATELY TWO HOURS. ACCORDING TO THE TIME CONTROL PLAN, THE PRODUCTS WERE ON TIME CONTROL DURING THE BUFFET, BUT HAD NOT BEEN DISCARDED. THEY WERE DISCARDED IMMEDIATELY.
Recommendation: Ensure all food on time control is discarded within 4 hours or as described in the time control plan, whichever is less. If time only, rather than time in conjunction with temperature, is used as the public health control for a working supply of potentially hazardous food before cooking, or for ready-to-eat potentially hazardous food that is displayed or held for service for immediate consumption, ensure that (1) The food is marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control; (2) The food is cooked and served, served if ready-to-eat, or discarded, within 4 hours from the time when the food is removed from temperature control; and (3) The food in unmarked containers or packages or marked to exceed a 4 hour limit is discarded.

Site: Food Service General-
Violation: SLOTTED FASTENERS WERE NOTED IN THE FOOD CONTACT AREAS OF THE CORNELIUS ICE MACHINES. THESE MACHINES ARE LOCATED THROUGHOUT THE GALLEYS AND HOUSEKEEPING ICE PANTRIES.
Recommendation: Ensure that multiuse food-contact surfaces are: (1) Smooth; (2) Free of breaks, open seams >1 mm (1/32 inch), cracks, chips, inclusions, pits, and similar imperfections; (3) Free of sharp internal angles, corners, and crevices; (4) Finished to have smooth welds and joints; and (5) Accessible for cleaning and inspection by one of the following methods without being disassembled, by disassembling without the use of tools, or by easy disassembling with the use of handheld tools commonly available to maintenance and cleaning personnel such as screwdrivers, pliers, open-end wrenches, and Allen wrenches. Replace the slotted fasteners with smooth, low-profile, non-corroding fasteners.

Site: Food Service General-DECK 4 & 5 GALLEYS
Violation: MANY OF THE GREASE TRAP DRAWERS WERE BENT ALONG THE EDGES, MAKING CLEANING DIFFICULT.
Recommendation: Repair the grease trap drawers. Ensure that nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Site: Pantry-DECK 4 PORT FWD ICE PANTRY
Violation: THE DATA PLATE WAS MISSING ON THE GLASS WASHING MACHINE. THIS WAS CORRECTED DURING THE INSPECTION.
Recommendation: Ensure that warewashing machines are provided with an easily accessible and readable data plate affixed to the machine by the manufacturer that indicates the machine's design and operating specifications including the: (1) Temperatures required for washing, rinsing, and sanitizing; (2) Pressure required for the fresh water sanitizing rinse; and (3) Conveyor speed for conveyor machines or cycle time for stationary rack machines.

Violation: THE TECHNICAL COMPARTMENTS AND DRAINS UNDER THE INDUCTION HEATING UNITS WERE SOILED WITH FOOD DEBRIS.
Recommendation: Ensure that nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: CONDENSATION WAS COLLECTING ON THE DECKHEAD ABOVE THE SOILED END OF THE FLIGHT-TYPE DISHWASH MACHINE.
Recommendation: Ensure that ventilation hood systems and devices are sufficient in number and capacity to prevent grease or condensation from collecting on bulkheads and deckheads.

Violation: THE PIZZA OVEN LOCATED IN THE CREW GALLEY HAS NEVER BEEN USED SINCE THE DELIVERY OF THIS VESSEL AND THE STAFF STATED THAT THERE ARE NO PLANS FOR FUTURE USE OF THE OVEN.
Recommendation: Remove the pizza oven.
