Site: Provisions-Parasite Destruction Letter
Violation: The parasite destruction letter from Aqua Farms did not stipulate the length of time that the fish was frozen to -18C.
Recommendation: Before service in ready-to-eat form, ensure that raw, raw-marinated, partially cooked, or marinated-partially cooked fish other than molluscan shellfish: (1) Are frozen throughout to a temperature of -20C (-4F) or below for 168 hours (7 days) in a freezer; or -35C (-31F) or below for 15 hours in a blast freezer.

Site: Buffet-Topsider's Buffet - Port Beverage Station
Violation: The ice scoop was stored in the ice chest and the scoop handle was in direct contact with the ice.
Recommendation: During pauses in food preparation or dispensing, ensure that food preparation and dispensing utensils are stored: (1) In the food with their handles above the top of the food and the container.

Site: Bar-Parrot Cage Service Bar
Violation: Galvanic action between the metal brackets and the stainless steel side walls in the technical spaces resulted in rust accumulation and rough surfaces, making cleaning difficult.
Recommendation: Ensure that nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning are constructed of a corrosion-resistant, nonabsorbent, and smooth material.

Violation: A few decorative tiles on the service counter doors were chipped, broken or missing, making cleaning difficult.
Recommendation: Ensure that nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Violation: There was a hole in the back wall of the technical space (expresso # 203), making cleaning difficult. This was corrected at the time of the inspection.
Recommendation: Ensure that nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Violation: There was some loose, peeling soft sealant on the exterior non-food contact surfaces of the grills.
Recommendation: Remove and replace the sealant.

Violation: The deck under the pallets was soiled with more than one days accumulation of organic matter, dust and other debris. The vessel had taken on stores the day before and staff stated that the deck had been cleaned at that time.
Recommendation: Ensure that decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas, are cleaned as often as necessary.

Violation: The deck under the soda dispenser was soiled with greater than one days accumulation of broken glass, bottle caps, soil and organic matter.
Recommendation: Ensure that decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas, are cleaned as often as necessary.

Violation: A gap was noted at the deckhead on the right hand side of the glass storage area near the entrance to the bar.

Violation: The main deck and technical space deck surfaces throughout the galleys were rough and difficult to clean due to pitting, bubbling, and peeling of the deck coating material.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning.

Violation: A few deck tiles were found to be cracked and/or chipped in each of the provisions areas, primarily at the tile and stainless steel interfaces, making cleaning difficult.

Site: Other-Dining Rooms
Violation: The deck/counter junctures at the wait stations were not coved. Some cove strips were on the vessel and staff were in the process of installing the units. A purchase order for 120 feet of additional coving had been placed.
Recommendation: Ensure that bulkhead and deck junctures are coved (including galleys, pantries, deck/counter junctures at buffets, bars, waiter stations, and dining room work counters).

Site: Galley-Garde Manger Pantry
Violation: The scupper drain below the handsink (behind expresso #202) was draining slowly and retaining wastewater. This was corrected at the time of the inspection.
Recommendation: Ensure that a plumbing system in a food area is maintained in good repair.

Site: Integrated Pest Management-
Violation: The management plan from Rentokil did not mention any night time monitoring or plan evaluations. Records indicated that this vessel was conducting night time monitoring.
Recommendation: Ensure that the Integrated Pest Management Plan sets a schedule for periodic monitoring inspections including some at night. Ensure that the vessel's Integrated Pest Management Plan is evaluated for effectiveness every 2 years or whenever there is a significant change in the vessel's structure such as a renovation or operation.
