There was no record of manual testing of the chlorine analyzer to verify calibration at the beginning of potable water production. Log entries every four hours were taken directly from the analyzer, and calibration was not made at the start of production.

Recommendation:
Ensure that halogen analyzer-chart recorders used in lieu of manual tests and logs are calibrated at the beginning of bunkering or production, and the calibration is recorded on the chart or in a log book.

Recommendation:

There were no depth markings at the therapy pool, and there was no floatation device or shepherd's hook provided. The pool water depth exceeded 1 meter.

Recommendation:
Ensure that the depth of each pool is prominently displayed so that it can be seen from the deck and in the pool. Ensure that depth markers are labeled in feet or meters, or both,. Additionally, ensure that depth markers are installed for every 1 m (3 feet) in change of depth. Ensure that an easy-access shepherd's hook and approved floatation device (with a length of line 1/2 the pool width or 16 m (50 feet)) is provided at a prominent location near each public swimming pool.

The side wall suction cover inside the two men's and two women's jet tubs had no markings of being anti-entrapment covers. When in jet mode there was a definite suction from these covers.

Recommendation:
Ensure that anti-entrapment drain covers or other drains that prevent entrapment hazards as specified in U.S. Consumer Product Safety Publication 363-009801 (dual drains/channel drains) are provided on swimming pools and whirlpool spas. Ensure that drain covers have either the plumbing/engineering approving organization stamp and flow rate affixed to the cover, or that a letter is maintained aboard the vessel certifying that the cover meets the safety requirements outlined in AMSE/ANSI A112.19.8M or an equivalent standard.

Ensure that working containers holding food or food ingredients that are removed from their original packages for use on the vessel, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar are identified with the common name of the food.

Recommendation:
Ensure that warewashing equipment is maintained in good repair and proper adjustment including: (1) Being maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines; and (2) Maintaining water pressure, and water temperature measuring devices in good repair and ensuring their accuracy within the intended range of use.

The final rinse spray could not be observed on the in-use flight-type conveyor dishwash machine. This machine had special rinse nozzles installed in the upper and lower final rinse spray arms, which require a special manufacturer bypass mechanism to allow the side doors to be opened during operation to view the final rinse compartment, and this has not been installed.

Recommendation:
Contact Hobart and request the needed bypass mechanism to allow visual inspection of the final rinse nozzle spray.

The final rinse temparuture on the in-use conveyor dishwash machine 057226 was measured at 153 F. This was corrected during the inspection.

Recommendation:
In a manual operation, ensure that if immersion in hot water is used for sanitizing: (1) The temperature of the water is maintained at 77C, (171F) or above; and (2) The food-contact surface is immersed for at least 30 seconds.

The top of the entire length of the glass sneeze shield, including the rounded shield along the cold island buffet where fruits and pastry items were displayed for self-service, had a significant layer of dust debris.

Recommendation:
Ensure that nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.
