Item No.: 08
Site: Potable Water-Comprehensive Cross-Connection Control Program
Violation: The air gap for the high saline overboard discharge was not listed in the comprehensive cross-connection control program.
Recommendation: Ensure that the cross-connection control program includes at minimum: a complete listing of cross-connections and the backflow prevention method/device for each, so that there is a match to the plumbing system component and location, and an inspection frequency. Ensure that air-gaps are included in the listing.

Site: Potable Water-Bunkering
Violation: The bunkering records did not indicate that a 2.0 ppm chlorine residual was reached within 30 minutes.
Recommendation: Ensure that accurate records of this monitoring are maintained aboard for 12 months and are available to the VSP for review during inspections.

Site: Other-Lounge
Violation: There was a plate of grapes and sliced oranges on display for self-service that was not covered or otherwise protected.
Recommendation: Ensure that food on display is protected from contamination by the use of packaging; counter, service line, or salad bar food guards; display cases; or other effective means.

Site: Other-Deck 2 stores
Violation: The interior of the chest freezer was coated with frost, making cleaning difficult. In addition, there was some damage to the gasket and exterior of the unit. Per the captain, a replacement unit was delivered on the day of the inspection and would be installed.
Recommendation: Ensure that food contact equipment is maintained in a state of repair and condition that meets the materials, design, construction, and operation specifications of these guidelines.
