Site: Recreational Water Facilities-Compensation Tank Rooms
Violation: The potable water lines supplying the compensation tanks were not striped or painted blue.
Recommendation: Ensure that potable water piping and fittings are painted or striped auxiliary blue, or in accordance with ISO 14726, at 5 m (15 feet) intervals on each side of partitions, decks, and bulkheads in all spaces, except where the decor would be marred by such markings.

Violation: There was blue striping on the technical water lines supplying the chemical dosing stations for the pools and jacuzzis.
Recommendation: Remove the blue striping or add a secondary color for the technical water lines.

Violation: The length of duration for the shock halogenation of the jacuzzis was not recorded.
Recommendation: Ensure that a written or electronic record of whirlpool spa filter inspection, backwashing, core sample sedimentation test, and shock halogenation (concentration and contact time) is maintained and available for review during inspections.

Site: Recreational Water Facilities-All Pools
Violation: There were no anti-entrapment covers on the stainless steel suction fittings on the lower side walls of each swimming pool.
Recommendation: Ensure that anti-entrapment drain covers or other drains that prevent entrapment hazards as specified in U.S. Consumer Product Safety Publication 363-009801 (dual drains/channel drains) are provided on swimming pools and whirlpool spas. Ensure that drain covers have either the plumbing/engineering approving organization stamp and flow rate affixed to the cover, or that a letter is maintained aboard the vessel certifying that the cover meets the safety requirements outlined in AMSE/ANSI A112.19.8M or an equivalent standard.

Violation: The water in the pool was very cloudy. It was difficult to see the drain covers at the bottom of the pool.
Recommendation: Ensure that the re-circulated swimming pool's water flow rates, pH, alkalinity, and clarity is monitored and adjusted as recommended by the manufacturer and to maintain optimum public health protection.

Violation: The floatation device was not located in a prominent location.
Recommendation: Ensure that an easy-access shepherd's hook and approved floatation device (with a length of line 1/2 the pool width or 16 m (50 feet)) is provided at a prominent location near each public swimming pool.

Site: Galley-Time as a Public Health Control Plan
Violation: The time as a public health control plan stated that warmer 6 was on time control and was labeled as time only. The plan also stated that foods on time control would have a four hour discard label. Warmer number 6 was not labeled as time only and the eight pans of rice inside the warmer were not labeled with discard labels. Staff were able to determine that the rice had only been in the warmer for 30 minutes by looking at the time logs. Discard labels were then placed for the rice.
Recommendation: Ensure the vessel is following the procedures posted on the time as a public health control plan.

Violation: The time as a public health control plan stated that refrigerators 7 & 8 were on time control. Per staff, these units were on temperature control. A tray of deli meats inside refrigerator 7 had seven day discard labels. The temperature of the deli meat was below 41 F.
Recommendation: Ensure the time as a public health control plan reflects the operation of this food outlet.

Site: Galley-Deck 6
Violation: Per staff, the roasted peppers in the walk-in refrigerator were cooled in an ice/water bath but the temperatures were not recorded on any cooling logs.
Recommendation: Ensure that logs documenting cooked, potentially hazardous food cooling temperatures and times from the starting points designated in 7.3.5.2.1 thru the control points at 2 and 6 hours are maintained onboard the vessel for a period of 30 days form the date the food was placed in the cooling process. Ensure that logs documenting cooling of potentially hazardous foods prepared from ingredients at ambient temperatures, with the start time to the time when 5C (41 F) is reached are also maintained for a period of 30 days, beginning with the day of preparation.

Violation: The serving utensil handle for the hash browns was inside the food contact area of the serving dish. The utensil was too short for this dish.
Recommendation: During pauses in food preparation or dispensing, ensure that food preparation and dispensing utensils are stored: (1) In the food with their handles above the top of the food and the container.

Recommendation: Ensure that warewashing equipment is maintained in good repair and proper adjustment including: (1) Being maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines; and (2) Maintaining water pressure, and water temperature measuring devices in good repair and ensuring their accuracy within the intended range of use.

Violation: There was a housefly inside an uncovered container full of cheese on the counter for the pizzeria set-up. The cheese was discarded.
Recommendation: Ensure that the presence of insects, rodents, and other pests is effectively controlled to minimize their presence in the food storage, preparation, service areas, warewashing, and utensil storage areas aboard a vessel.
