Site: Potable Water-Distribution System
Violation: It appeared that the ship had a forward and aft distribution loop that was interconnected and shared a common return line. However, the E3 line off of the manifold that served the bell box pantry and the Sky Walker Bar was not interconnected with the rest of the system except at the return line. This left a far point of the system that was not being analyzed for a free halogen residual by an automatic halogen analyzer with a chart recorder. Per the staff's records, two manual free halogen residual tests were performed each day at the Sky Walker Bar and were within the acceptable range of 0.2 to 5 ppm free residual chlorine.
Recommendation: Ensure that a halogen analyzer-chart recorder is installed at a distant point in the potable water distribution system where a significant water flow exists. In cases where dual distribution loops exist, and no pipes connect the loops, ensure that an analyzer and chart recorder is installed on each loop.

Site: Medical-Asymptomatic Crew
Violation: During the last cruise, the ill crew member's close contact was not interviewed at the 48 hour interval after the onset of crew illness. The contact was interviewed immediately and at 24 hours only.
Recommendation: Ensure that medical staff conduct daily verbal interviews with asymptomatic crew until 48 hours after onset of the ill crew member's symptoms.

Site: Galley-Time As A Public Health Control Plan
Violation: The time as a public health control plan stated the bain marie units in the galley were on temperature control. Per staff, these units were on time control. This was corrected.
Recommendation: Ensure the time as a public health control plan reflects the service.

Violation: There was a missing side shield on the sneeze guard at the last section of the buffet line.
Recommendation: Ensure that food on display is protected from contamination by the use of packaging; counter, service line, or salad bar food guards; display cases; or other effective means.

Violation: The stone plate inside the middle oven was cracked.
Recommendation: Ensure that materials used in the construction of multiuse utensils and food-contact surfaces of equipment are: (1) Durable, corrosion-resistant, and nonabsorbent; (2) Sufficient in weight and thickness to withstand repeated warewashing; (3) Finished to have a smooth, easily cleanable surface; and (4) Resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.

Violation: There were slotted fasteners inside the ovens and on the collar of the mixers.
Recommendation: Replace the slotted fasteners with smooth, low profile and non-corroding fasteners.

Room Service handwash sink in warewash area and hot galley 4. Lido Galley Deck 14 soup stations Per staff, the ship was listing and this caused those deck drains to be clogged.
Recommendation: Ensure that a plumbing system in a food area is maintained in good repair.
