Site: Medical-Medical -Disease Reporting
Violation: For the voyage ending 12/02/2006, one passenger case was not reported for the 4-hour update report. The case-patient was evaluated by the medical staff prior to the submission of the 4-hour report
Recommendation: If the number of cases changes after submission of the initial report, ensure that an updated report is submitted no less than 4 hours before the vessel's arrival at the U.S. port.

Site: Recreational Water Facilities-Deck 7 Calypso/Neptune
Violation: On several days from November 24 through December 5, 2006 the chart recorders and manual logs showed the pools were continuously outside the 1 - 5 PPM chlorine halogenation range for several consecutive hours at a time (i.e. 16 hours). There were no notations of any action taken in either the chart recorder or manual records.
Recommendation: Ensure that a free residual halogen of >1.0 and <5.0 mg/L (ppm) is maintained in recirculated swimming pools.

Site: DO NOT USE (whirlpool/spa)-Deck 7 Neptune/Teen
Violation: On several days from November 24 through December 5, 2006 the chart recorders and manual logs showed that the whirlpool spas were continuously outside the 4 - 10 PPM bromine halogenation range for several consecutive hours at a time (i.e. 8 hours). There were no notations of any action taken in either the chart recorder or manual records.
Recommendation: Ensure that whirlpool spas are maintained at a free residual chlorine of >3.0 mg/L (ppm) and <10 mg/L (ppm), or a free residual bromine of >4.0 mg/L (ppm) and <10 mg/L (ppm).

Site: Galley-Deck 12 Horizon Cold Prep Area
Violation: A few trays of sliced meat were found at 44F - 45F in the last of the three-door undercounter refrigeration unit. The center unit meats were at 40F and the first unit (closest to the compressor) meats were at 38F. The refrigeration unit was checked and determined to be on a defrost cycle. The trays of meat at 44 - 45F were immediately placed in the blast chiller and the ventilation staff contacted to adjust the defrost cycle time.
Recommendation: Except during preparation, cooking, or cooling, or when time is used as the public health control, ensure that potentially hazardous food is maintained: (1) At 60C (140F) [roasts 54C (130F)] or above, or (2) At 5C (41F) or less.

Violation: Two pans of pesto sauce were marked with 8-day labels vice 7-day labels. This item was corrected during the inspection.
