Violation:
Some of the notes made in the electronic system when potable water tanks are cleaned and disinfected are incomplete. On the 24 November 2006 cleaning and disinfection record for potable water tank #3 starboard the record describes that the tank was cleaned, then disinfected. The disinfection concentration and contact time are provided. There was no notation that the tank was rinsed following washing, flushed, filled, or otherwise decontaminated following disinfection, and no verification that the tank when refilled had a free chlorine residual below 5 ppm.

Recommendation:
Ensure that documentation of any inspection, cleaning, disinfection (including concentration and contact time of disinfectant), and flushing is maintained for 12 months and is available to the VSP for review during inspections.

Later an inspection of one trolley of clean ice buckets revealed again the missing bottom plugs and water leaking onto the trolley shelves from the drainage of water from the plugs. Staff stated a sealant application has been used to address the problem, but not all ice buckets have been corrected.

This area is not constructed with sufficient space to stage dirty items, so staff have created a series of deck stands and trolleys which they station along the bulkhead adjacent to the potwash. Additionally, one trolley filled with stacked dirty plastic bins was positioned in front of the potwash machine and beside the clean storage rack. That end of the rack had a splash panel inside. The design and space should be improved at the next opportunity for construction changes.

The corridor door to the front bar was pinned open with some waste bins. The entry door to the service pantry behind the bar was also locked open, allowing easy access for insects into the pantry areas. Additionally, the rear pantry swing door for access from the Solarium bar had large openings around the perimeter which would also allow entry from pests.

Recommendation:
Keep the corridor door closed when the bar is open. Seal the large openings around the swing door.
