Site: Potable Water-Potable Water - Microbiological Analysis
Violation: In the microbiological monitoring log, the directions for the analysis included under #3 a statement that the analysis was for the presence of coliforms. Re-test if positive. There was no mention of the use of a ultraviolet light following an initial positive test to check for fluourescent activity and the presence of Eschirichia coli bacteria.
Recommendation: Ensure that the log form instructions are changed to include the test required for E. coli bacteria using the ultraviolet light when a positive coliform bacteria test is confirmed.

Site: Potable Water-Potable Water - Cross-Connection Control Plan
Violation: The air-gaps for the 2 mineralizer drains (to bilge) and the 2 water softener drains (to bilge) were not listed for inspection in the cross-connection combined list of backflow preventers. The list includes potable water connections to chemical lockers on decks 4,6, and 8 with a NLFS9 Watts backflow preventer. There is only one chemical locker now, on deck 8, and the preventer installed on the potable water line is a Watts N9. Additional to that are individual preventers installed on the Eco-Lab chemical dispensers, which are not listed.
Recommendation: Ensure that the cross-connection control program includes at minimum: a complete listing of cross-connections and the backflow prevention method/device for each, so that there is a match to the plumbing system component and location, and an inspection frequency. Ensure that air-gaps are included in the listing. Ensure that a log documenting inspection and maintenance, in written or electronic form, is maintained and available for review during inspections.

Site: DO NOT USE (whirlpool/spa)-Port and Starboard Side Whirlpool Spas - Halogenation
Violation: The deck 9 port spa was open and had a free chlorine residual of 2.5 ppm on the ship's manual test and 2.5 ppm on the inspector's kit. The starboard side spa was open and had a free chlorine residual of 2.65 ppm on the ship's manual test and 2.32 ppm on the inspector's kit. Both were closed immediately for chlorination. A later manual test gave 4.50 ppm residual.
Recommendation: Ensure that whirlpool spas are maintained at a free residual chlorine of >3.0 mg/L (ppm) and <10 mg/L (ppm), or a free residual bromine of >4.0 mg/L (ppm) and <10 mg/L (ppm).

Site: DO NOT USE (whirlpool/spa)-Port and Starboard Side Whirlpool Spas - Temperature
Violation: The whirlpool spas were open for use and the water temperature in the port side spa was measured at 106 F and 107 F in the starboard whirlpool spa.
Recommendation: Ensure that a temperature control mechanism to prevent the temperature from exceeding 40C (104F) is provided on whirlpool spas.

Site: Galley-Terrace Cafe - Galley
Violation: A mobile hot hold trolley in the galley contained two just cooked turkeys. Staff stated the turkeys were on time only control of bacterial growth, and that the time clock began when the turkeys were removed from the refrigerator for preparation and cooking. There was no documentation that the turkey ever reached the cooking control point of 165 F. Staff also stated they do make the control check for cooking temperature.
Recommendation: Ensure that there is a temperature control point documented on the cooking critical control prior to the beginning of time control.

Site: Buffet-Terrace Cafe - Buffet Beverage Station
Violation: The ice/water dispenser unit had a trigger design which touched the lip contact surface of the glasses used. Staff stated that passengers are permitted to refill their glasses at this station.
Recommendation: Ensure that procedures for second portions and refills are as follows: (1) Except for refilling a consumer's drinking cup or container without contact between the pouring utensil and the lip-contact area of the drinking cup or container, food employees may not use tableware, including single-service articles, soiled by the consumer, to provide second portions or refills. (2) Except as specified below, self-service consumers may not be allowed to use soiled tableware, including single-service articles, to obtain additional food from the display and serving equipment.

Violation: The gasket on the doors for the beer cooler were loose.
Recommendation: Repair the loose gaskets.

Violation: Excessive sealant was found on the combi oven, the back side of the salamander and on the protective housing for the steam lines serving the tilting kettles.
Recommendation: Remove excessive sealant from the combination oven, salamander broiler, and steam pipes for the tilting kettles.

Violation: Open pipe penetrations were noted on the bulkhead behind the tilting pans and kettles.
Recommendation: Profile off the openings at pipe penetrations to the bulkhead or properly grommet these openings.

Violation: An open seam was noted on the left side of the exhaust hood where it meets the bulkhead.
Recommendation: Seal or profile the open seam on the exhaust hood.

Violation: The deck juncture with the bulkhead was not coved in the corridor between the galley and the buffet service area.
Recommendation: Ensure that bulkhead and deck junctures are coved (including galleys, pantries, deck/counter junctures at buffets, bars, waiter stations, and dining room work counters).

Violation: There was water leak within the protective housing for the steam/water lines of the center tilting kettle.
Recommendation: Ensure that a plumbing system in a food area is maintained in good repair.

Violation: The protective film on the light covers within the hood area were peeling or had peeled off.
Recommendation: Replace shatter-resistant lights when the protective surface cover is damaged or missing.

Site: Integrated Pest Management-Integrated Pest Management - Active Monitoring
Violation: Although the IPM written plan specifies night inspections in various operational areas of the ship, staff who perform these inspections are essentially just checking the passive traps placed throughout, they are not physically inspecting throughout the areas for live pests at night.
Recommendation: Ensure all onboard staff who conduct the night inspections clearly understand that part of those inspections must include an inspection of the entire space for live pests, and not simply a review of only the trap placed in a location.

Site: Housekeeping-Housekeeping - Public Toilets
Violation: The spa area public toilet rooms had waste cans for the hand towels near the handwash sinks and not near the exit doors. The other public toilet rooms had wicker hand towel baskets located near exit doors, but they all had manual lids which had to be opened to discard the cloth hand towels.
Recommendation: Modify with foot pedal the wicker lids on the waste bins for paper towels or remove the lids to allow use without physically touching the lid to dispose of paper towels.
