Glass washer in the operating dishwashing area (Monet) was out of service for a leak when inspection commenced. Repairs were completed on that problem, but machine would not return to proper sanitizing temperature. Maximum recorded surface temperature was 154°F after multiple attempts. Control circuit board was in the process of being replaced when inspection of this area was concluded. This was the only functional glasswash unit in the area.

Recommendation:
Complete repairs on the glasswasher and ensure that at least 160 F is reached at the plate surfaces before placing the unit back in service.
