Site: Potable Water-
Violation: Potable water lines were not striped blue in the aft whirlpool pump room or the garbage room.
Recommendation: Ensure that potable water piping and fittings are painted or stripped auxiliary blue, or in accordance with ISO 14726, at 5 m (15 feet) intervals on each side of partitions, decks, and bulkheads in all spaces, except where the decor would be marred by such markings.

Violation: The comprehensive cross-connection control program did not list the location and the method/device used.
Recommendation: Ensure that the cross-connection control program includes at minimum: a complete listing of cross-connections and the backflow prevention method/device for each, so that there is a match to the plumbing system component and location, and an inspection frequency. Ensure that air-gaps are included in the listing.

Violation: A backflow protection device was not installed on the potable water line supplying the hose in the photography laboratory.
Recommendation: Ensure that backflow preventers are installed when air gaps are impractical or when water under pressure is required.

Site: DO NOT USE (whirlpool/spa)-Thalassotherapy Pool
Violation: A length of rope was not attached to the floatation device. This pool was more than 1 meter in depth. This was corrected during the inspection.
Recommendation: Ensure that an easy-access shepherd's hook and approved floatation device (with a length of line 1/2 the pool width or 16 m (50 feet)) is provided at a prominent location near each public swimming pool.

Site: DO NOT USE (whirlpool/spa)-Thalassotherapy Pool
Violation: The depth markers were worn and difficult to read. This was corrected during the inspection.
Recommendation: Ensure that the depth of each pool is prominently displayed so that it can be seen from the deck and in the pool. Ensure that depth markers are labeled in feet or meters, or both,. Additionally, ensure that depth markers are installed for every 1 m (3 feet) in change of depth.

Site: DO NOT USE (whirlpool/spa)-General
Violation: There were numerous days when there was no indication that the sand filters were backwashed. There were a few days when there was no indication that the halogen residual was raised to 10 ppm and circulated for one hour, the filters were backwashed or that the water in the whirlpools was dumped. These dates were 12/16-17/2007, 1/22-23/2007, 1/25/2007 and 1/13/2007. Per the staff all these days coincided with days when the vessel could not dump the water due to it's proximity to land.
Recommendation: Ensure that granular filters are backwashed at least daily. Repeat backwashing, if necessary, until the water viewed through the sight glass or discharge point is clean flowing. Ensure that the whirlpool spa water is changed daily. Ensure that the free residual halogen is increased to at least 10.0 mg/L (ppm) in whirlpool spas and circulated for at least 1 hour at the end of each day. Ensure that a written or electronic record of whirlpool spa filter inspection, backwashing, core sample sedimentation test, and shock halogenation (concentration and contact time) is maintained and available for review during inspections.

Violation: Grey drain covers were noted on the main drains and over the suction lines. A certification stamp was not provided on these drain covers and the vessel did not have any documentation on these drain covers to indicate they were anti-entrapment covers.
Recommendation: Ensure that anti-entrapment drain covers or other drains that prevent entrapment hazards as specified in U.S. Consumer Product Safety Publication 363-009801 (dual drains/channel drains) are provided on swimming pools and whirlpool spas. Ensure that drain covers have either the plumbing/engineering approving organization stamp and flow rate affixed to the cover, or that a letter is maintained aboard the vessel certifying that the cover meets the safety requirements outlined in AMSE/ANSI A112.19.8M or an equivalent standard.

Violation: The time control plan did not list portable refrigeration unit 6 as being under time control. This unit was not labeled for use under time control. The early breakfast time control log did not list this unit as under time control but the late breakfast log did. The log for foods under time control in this unit seemed to indicate both time and temperature control. It was not clear what method was used. Per the staff the unit was always under time control.
Recommendation: Ensure that the time control plans lists refrigeration units that are unde time control. Post a sign on the refrigeration units that are under time control. Ensure that logs clearly show what method is used to control the growth of bacteria; temperature or time.

Violation: The non-stick coating on several frying pans was peeling off.
Recommendation: Discard pans that have damaged coatings. Ensure that multiuse kitchenware such as frying pans, griddles, sauce pans, cookie sheets, and waffle bakers that have a perfluorocarbon resin coating are used with nonscoring or nonscratching utensils and cleaning aids.

Violation: Two cutting boards were very pitted and scored, making cleaning difficult.
Recommendation: Ensure that surfaces such as cutting blocks and boards that are subject to scratching and scoring are resurfaced if they no longer can be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.

Violation: Hex head bolts were noted within the abrasive pad of the potato peelers, making cleaning difficult.
Recommendation: Ensure that multiuse food-contact surfaces are: (1) Smooth; (2) Free of breaks, open seams >1 mm (1/32 inch), cracks, chips, inclusions, pits, and similar imperfections; (3) Free of sharp internal angles, corners, and crevices; (4) Finished to have smooth welds and joints; and (5) Accessible for cleaning and inspection by one of the following methods without being disassembled, by disassembling without the use of tools, or by easy disassembling with the use of handheld tools commonly available to maintenance and cleaning personnel such as screwdrivers, pliers, open-end wrenches, and Allen wrenches.

Violation: A brass backflow prevention device was noted between the pump and the carbonator.
Recommendation: Ensure that copper and copper alloys such as brass are not used in contact with a food that has a pH below 6 such as vinegar, fruit juice, or wine or for a fitting or tubing installed between a backflow prevention device and a carbonator.

Violation: Small decorative bulkhead tiles were used as coving. Several tiles were missing, making cleaning difficult.

Violation: A small hole was noted in each light shield. Per the staff this was for ventilation to prevent the covers from being damaged by the heat of the light bulbs. The light near the handwash station was not shielded or shatter-resistant.
Recommendation: Ensure that light bulbs are shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, and linens, or unwrapped single-service and single-use articles.

Violation: The light level was inadequate.
Recommendation: Ensure that the light intensity is at least 220 Lux (20 foot candles) on food preparation surfaces, and at a distance of 75 centimeters (30 inches) above the deck in food preparation areas, handwashing facilities, warewashing areas, equipment, and utensil storage, pantries, toilet rooms, and consumer self-service areas.

Recommendation: Ensure that the light intensity is at least 220 Lux (20 foot candles) in bars and at dining room waiter stations during periods of cleaning.

Violation: A sign informing individuals to wash their hand in between each diaper change was not posted at the diaper changing station.
Recommendation: Ensure that signs are posted in the diaper-changing area advising child-activity center staff to wash their hands after each diaper they change.
