Site: Galley-Hood Cleaning Cabinet
Violation: The backflow prevention device was continuously dripping, indicating that a seal may have failed.
Recommendation: Ensure that backflow preventers are maintained in good repair.

Violation: The air gaps for the ice machines were not listed in cross-connection control plan.
Recommendation: Ensure that the cross-connection control program includes at minimum: a complete listing of cross-connections and the backflow prevention method/device for each, so that there is a match to the plumbing system component and location, and an inspection frequency. Ensure that air-gaps are included in the listing.

Site: Preparation Room-Potato Peelers #01 and #02
Violation: The interior abrasive material was worn and chipped, making cleaning difficult. Unit # 02 was posted out of order. A work order was in place for both units.
Recommendation: Ensure that food contact equipment is maintained in a state of repair and condition that meets the materials, design, construction, and operation specifications of these guidelines.

Violation: The gasket between the cuber and ice bath was loose and hanging into the ice bath. This was repaired at the time of the inspection.

Site: Galley-Starboard Side Ice Machine # 101
Violation: A few fasteners were missing on the left side of the cuber. A few of the other fasteners were rusted.
Recommendation: Install missing fasteners. Ensure that nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning are constructed of a corrosion-resistant, nonabsorbent, and smooth material. Install these missing fasteners.

Violation: A few service trays were found with chipped and cracked surfaces. The trays were discarded at the time of the inspection.
Recommendation: Ensure that nonfood-contact surfaces of equipment and utensils are designed and constructed to be durable and to retain their characteristic qualities under normal use conditions.

Violation: The exterior laminate material on the wait station drawers and cabinet doors was chipped and peeling.

Violation: There were small gaps along the door frame welds creating access to the door frame void space.

Violation: The technical spaces had greater than one days accumulation of dust and debris. There were several loose fasteners and unsecured temperature probes.
Recommendation: Ensure that nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris. Secure loose fasteners and temperature porbes. Violation: A chicken bone was noted on the deck under the blast chiller. This area was previously cleaned and was not in active use.
Recommendation: Ensure that decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas, are cleaned as often as necessary.

Site: Other-Normandy Restaurant
Violation: There was no coving at the deck/bulkhead junctures in the entry way. Gaps were noted along the juncture. The lower portion of the bulkhead panels had water damage, creating swollen and rough surfaces.
Recommendation: Ensure that bulkhead and deck junctures are coved (including galleys, pantries, deck/counter junctures at buffets, bars, waiter stations, and dining room work counters). Ensure that bulkheads and deckheads have smooth, hard finishes, and light colored surfaces.

Site: Galley-Waterfall Cafe - Warewash Area
Violation: The potwash and dishwash area was unusually hot and humid.
Recommendation: Ensure that all food preparation, warewashing, and toilet rooms have sufficient ventilation to keep them free of excessive heat, steam, condensation, vapors, obnoxious odors, smoke, and fumes.

Site: Room Service-Deck 8 Bellbox
Violation: Four drain flies were noted in the hood cleaning cabinet. IPM logs indicate that the deck drain in front of the hood cleaning cabinet was treated 2 days prior to the inspection. The flies may be harboring in the cabinet to deck drain line. IPM staff were alerted to the fly presence.
Recommendation: Ensure that entry points where pests may enter the food areas are protected.
