Site: Housekeeping-Room Steward
Violation: The handle of an ice scoop was in direct contact with the ice. This was noted in the ice chest of a room steward.
Recommendation: During pauses in food preparation or dispensing, ensure that food preparation and dispensing utensils are stored: (2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed, such as bins of sugar, flour, or cinnamon.

Violation: The soft serve ice cream machine had not been used for a month and a half. The ship was awaiting spare parts.
Recommendation: Ensure this machine is repaired as soon as replacement parts arrive.

Violation: The bi-metallic stem thermometer used to check the sanitizing rinse temperature was not reading temperatures correctly. This items was corrected during the inspection.
Recommendation: Ensure that water temperature measuring devices: (1) That are scaled in Celsius or dually scaled in Celsius and Fahrenheit are designed to be accurate to 1.5C in the intended range of use. (2) That are scaled only in Fahrenheit are designed to be accurate to 3F in the intended range of use.

Violation: The final rinse pressure gauge on the in-use conveyor dishwasher registered 12 psi during active use.
Recommendation: Ensure that the flow pressure of the fresh hot water sanitizing rinse in a warewashing machine is not less than 100 kilopascals (15 pounds per square inch) or more than 170 kilopascals (25 pounds per square inch) as measured in the water line immediately downstream or upstream from the fresh hot water sanitizing rinse control valve.
