Violation: One sanitizer bucket was measured with a chlorine concentration of less than 50 ppm.
Recommendation: Ensure that a chlorine solution used as a sanitizing solution has a concentration between 50 mg/L (ppm) and 200 mg/L (ppm).

Violation: Two previously cleaned bar glasses were found soiled and stored as clean.

Violation: The mounted final rinse temperature gauge on the in-use mechanical potwash measured in excess of 210F. The recorded pot surface temperature was measured at 160 F and 170F. The gauge appears to be out of calibration.

Recommendation: Repair or replace the final rinse temperature gauge.

Violation: A large amount of soiled pots and pans were stored on deck stands in the passage areas near the potwash, indicating a lack of proper soiled item storage area.
Recommendation: Ensure that drainboards, utensil racks, or tables large enough to accommodate all soiled and cleaned items that may accumulate during hours of operation are provided for necessary utensil holding before cleaning and after sanitizing.

Violation: A combination oven was posted out of order since 23 June 2007. The ship is awaiting spare parts.

Violation: A gap was noted on the left hand side where the tilting pan pillar housing meets the stainless steel bulkhead panel.
Recommendation: Tack weld the bulkhead stainless steel panel back to the tilting pan assembly housing.

Violation: The hood cleaning cabinet was located over a preparation counter in the trident galley. The detergent liquid was 2 inches from the top of the container.
Recommendation: Relocate the hood cleaning cabinet or otherwise modify it so the cleaning chemical cannot overflow, and that any overflowing liquid cannot reach food or food contact surfaces below the cabinet.

Violation: The door to the staff toilet did not fully close on its own after being pushed open.
Recommendation: Ensure that toilet rooms are completely enclosed and shall have tight-fitting, self-closing doors which shall be kept closed except during cleaning or maintenance.

Violation: The air-gaps on the drain lines beneath the atmospheric vents of the larger reduced pressure backflow assemblies were not twice the diameter of the pipe.
Recommendation: Ensure that air gaps are at least twice the diameter of the delivery fixture opening and a minimum of 3 cm (1 inch).
