Site: Galley-Main Galley - DK 3 - Soup/Sauce Station
Violation: A severely dented 6 lb can of whole peeled pear tomatoes was found in the production area.
Recommendation: Ensure that food packages are in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants. Ensure that canned goods with dents on end or side seams are not used.

Violation: A tray of sliced roast pork was found with an internal product temperature of 51-54F at approximately 1035 am. The items were prepared at 0930 am. These items were promptly placed into the blast chiller.
Recommendation: Except during preparation, cooking, or cooling, or when time is used as the public health control, ensure that potentially hazardous food is maintained: (1) At 60C (140F) [roasts 54C (130F)] or above, or (2) At 5C (41F) or less.

Site: Bar-Staff Bar Service Counter
Violation: The microwave oven shelf had bare and porous edges, making cleaning difficult.
Recommendation: Ensure that nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Violation: The dishwasher in the bellbox was posted out of order. The ship is awaiting replacement parts.
Recommendation: Repair the dishwasher in this area.

Violation: Dirty items were stored on the pizza counter. There was insufficient space to store soiled items.
Recommendation: Ensure that drainboards, utensil racks, or tables large enough to accommodate all soiled and cleaned items that may accumulate during hours of operation are provided for necessary utensil holding before cleaning and after sanitizing.

Violation: The door to the single compartment dishwasher was broken

Violation: The starboard mechanical potwash was posted out of order for at least the past 2 months. There is a second unit in this area that was fully operational. According to ship's personnel, this unit is scheduled for repair at the April 2008 drydock.
Recommendation: Repair the mechanical potwash unit.

Violation: The final rinse water of the manual potwash operation was measured at 167-168F. The area was in active use. This item was corrected during the inspection.
Recommendation: In a manual operation, ensure that if immersion in hot water is used for sanitizing: (1) The temperature of the water is maintained at 77C, (171F) or above; and (2) The food-contact surface is immersed for at least 30 seconds.

Violation: Some previously cleaned bowls were found soiled and stored as clean. This area was closed at the time of the inspection.
Recommendation: Ensure that food-contact surfaces of equipment and utensils are clean to sight and touch.

Violation: The tops of the commercial coffee makers were soiled with greater than one day's accumulation of dust.
Recommendation: Ensure that nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: The aft handwash station soap dispenser was empty. The dispenser button was broken. The area was in active use at the time of the inspection. There were two other fully functional handwash stations in this area.
Recommendation: Ensure that a handwashing facility includes a sink, soap dispenser, single-use towels dispenser, and waste receptacle. Ensure that handwashing facilities are kept clean and in good repair.

Violation: The soiled-side handwash station was not equipped with disposable paper towels. The handwash station was not dispensing hot or cold running water. These items were corrected during the inspection.
Recommendation: Ensure that a handwashing facility includes a sink, soap dispenser, single-use towels dispenser, and waste receptacle.

Violation: The coffee station technical compartment deck, behind the deck drain, was soiled with greater than one day's accumulation of dirt and debris.
Recommendation: Ensure that decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas, are cleaned as often as necessary.

Violation: The drain behind the ice machine in the hot galley was clogged and overflowing.
Recommendation: Ensure that a plumbing system in a food area is maintained in good repair.

Violation: The lighting level around the back grill and preparation table did not appear to be adequate.
Recommendation: Ensure that the light intensity is at least 220 Lux (20 foot candles) on food preparation surfaces, and at a distance of 75 centimeters (30 inches) above the deck in food preparation areas, handwashing facilities, warewashing areas, equipment, and utensil storage, pantries, toilet rooms, and consumer self-service areas.

Violation: The dishwash area was unusually hot and humid. Hot, moist air from the dishwash unit was not being adequately extracted and condensate was noted dripping from the deckheads.
Recommendation: Ensure that ventilation hood systems and devices are sufficient in number and capacity to prevent grease or condensation from collecting on bulkheads and deckheads.
