Site: Galley-Deck 3 Hood Cleaning Cabinet
Violation: The backflow prevention device was leaking from the intermediate atmospheric vent.
Recommendation: Repair the backflow prevention device.

Violation: The backflow prevention device had a constant drip from the intermediate vent.
Recommendation: Repair and maintain the backflow preventer.

Violation: The comprehensive cross-connection control plan indicated that Watts N9 3/8" were installed on showers throughout the vessel. Watts S8 devices were installed on the showers. The S8 is appropriate for the shower, but the plan did not list the correct device.
Recommendation: Ensure that the cross connection control program lists the devices that are installed throughout the vessel.

Site: Galley-Pastry Reach-In Unit 2.19
Violation: The unit was in defrost cycle and four sheet pans of cakes containing heavy cream and/or whipped cream were measured at 55F. The ambient temperature of the unit was measured at 45F. Cooling logs for the cakes were in order and the cakes were immediately moved to the blast chiller.
Recommendation: Continue to monitor this unit and foods held in the unit to ensure proper operation of the refrigerator and that potentially hazardous foods are kept at proper temperatures.

Site: Buffet-Beverage Station
Violation: The floor of the ice/water dispenser technical space was corroded at the stainless steel galvanized metal interface, making cleaning difficult.
Recommendation: Ensure that nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning are constructed of a corrosion-resistant, nonabsorbent, and smooth material.

Violation: The technical space was lightly soiled with dust and debris.
Recommendation: Clean the technical space.

Violation: Loose soft sealant was noted along the buklkhead/backsplash juncture.
Recommendation: Replace and maintain the soft sealant as needed.

Violation: The cleaning locker was not labeled. This was also noted in the lido pool bar, crows nest bar, and ocean bar pantries.
Recommendation: Label cleaning lockers throughout the vessel as needed.

Violation: The table mounted mixer was posted "out of order" since January 2007.
Recommendation: Repair the mixer.

Violation: A few small back flies were noted around the garbage can area.
Recommendation: Ensure that the vessel's food areas are inspected under the Integrated Pest Management Plan at a frequency that can quickly detect the evidence of pests or the creation of harborage conditions.
