Site: Potable Water-
Violation: The air gaps on the fill lines for the compensation tanks of the swimming pools and whirlpools were not listed on the cross connection control program. This was corrected during the inspection.
Recommendation: Ensure that the cross-connection control program includes at minimum: a complete listing of cross-connections and the backflow prevention method/device for each, so that there is a match to the plumbing system component and location, and an inspection frequency. Ensure that air-gaps are included in the listing.

Site: DO NOT USE (whirlpool/spa)-Backwashing Records
Violation: There was no record of the daily backwashing of the sand filters. Staff stated that the backwashing is manual and is conducted daily.
Recommendation: Ensure that a written or electronic record of whirlpool spa filter inspection, backwashing, core sample sedimentation test, and shock halogenation (concentration and contact time) is maintained and available for review during inspections.

Violation: The time of the daily shock halogenation was marked on the charts, but there was no indication of the concentration. Staff members stated that the shock halogenation system is automatic and the concentration is measured by the wiper each night to confirm the system is operating correctly, but the concentration was not recorded.
Recommendation: Ensure that a written or electronic record of whirlpool spa filter inspection, backwashing, core sample sedimentation test, and shock halogenation (concentration and contact time) is maintained and available for review during inspections.

Violation: The milk dispensing tube was more than one inch in length.
Recommendation: Ensure that the bulk milk container dispensing tube is cut on the diagonal leaving no more than 25mm (1 inch) protruding from the chilled dispensing head.

Violation: The drain line for two cold tops were soiled with food debris.
Recommendation: Ensure that nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: The waiter station at the end of the grill counter was not coved at the counter/deck juncture, making cleaning difficult.
Recommendation: Ensure that bulkhead and deck junctures are coved (including galleys, pantries, deck/counter junctures at buffets, bars, waiter stations, and dining room work counters).
