Site: Potable Water-Potable Water - Tank Coating
Violation: The electronic record for the 29 November, 2007 potable water tank maintenance and re-coating did not include a statement that the curing and drying following application was done according to the manufacturers recommendations.
Recommendation: Ensure that interior coatings on potable water tanks are approved for potable water contact, and all manufacturer's recommendations for application, drying, or curing are followed. Ensure written documentaion for the coating used and recommendations followed are avaialble for review during inspections.

Site: Potable Water-Cross-Connection Control
Violation: The written listing of cross-connections and backflow protection for same was absent any notation of the Ecolab chemical dispensing units, which are connected to potable water at stations and lockers throughout the ship. There was no record on the ship that these units were inspected either.
Recommendation: Ensure that the cross-connection control program includes at minimum: a complete listing of cross-connections and the backflow prevention method/device for each, so that there is a match to the plumbing system component and location, and an inspection frequency. Ensure that air-gaps are included in the listing. Ensure that a log documenting inspection and maintenance, in written or electronic form, is maintained and available for review during inspections.

Site: Recreational Water Facilities-Wet Play Area
Violation: The wet play area installed beside Mickey's Pool is designed specifically for children who are not toilet trained. The provisions for the variance supporting this operation include that a sign posted at the pool advises guests that such children must wear swim diapers, yet no such sign was posted today. A sign was created and installed during the inspection.
Recommendation: Ensure that children in diapers or who are not toilet trained are not permitted in the public swimming pools and whirlpool spas. Because this ship holds a valid and approved variance specific to this section, the ship must follow each and every practice and procedure specified in that variance. Ensure there is a a posting made permanent for swim diaper requirements for this pool (wet play area) and ensure it is enforced.

Site: Medical-Medical - Asymptomatic Close Contacts of Non-Food Handlers
Violation: The medical staff is isolating asymptomatic close contacts of non-food handlers for 24-hours and documenting the isolation period. However, there is no documentation for the 48-hour follow-up period. The current form is designed to document intial, 24-hour and 48-hour follow-up periods. The medical staff adequately documents asymptomatic close contacts of food handlers, since the isolation period for these persons is 48 hours.
Recommendation: Document the 48-hour symptom-free period for asymptomatic close contacts of non-food handlers on the current form.

Site: Galley-Main Galley and Crew Galley
Violation: The ship uses time as a public health control for potentially hazardous foods placed out on the buffet for self service. However, the stated practices do not agree with the contents of the plan. For example, the practice is to place potentially hazardous foods on time when the foods are placed on the buffet line. The plan states that time begins prior to cooking and preparation. Also, the plan lists food service areas that do not exist on the ship (e.g., Trident Grill and Topsiders)
Recommendation: Ensure that the actual practices followed in time as a public health control are consistent with the written time as a public health control program, and that ship areas named are accurate.

Site: Galley-Beach Blanket Galley - Lido
Violation: The written time as a public health control plan establishes that the potentially hazardous foods in the galley are managed on temperature control. During the galley inspection there were cooked broccoli, cauliflower, and carrots in large pans as back-up to the service lines. Additionally, there was clarified butter and a tomato based sauce held hot on a galley bain marie. Staff stated that all these foods were managed under time control and produced the time logs confirming that.
Recommendation: Ensure that the written time as a public health control plan is revised to reflect the actual time as a control practices taking place on the ship, so the plan and practice are consistent with each other.

Site: Other-Pinocchio's (Pizzeria Bar)
Violation: The front bar handwash station soap and paper towel dispenser was installed over the bar preparation counter, and the sink basin was installed in the bar counter center. Both conditions allowed water from the hands to drip on the counter surrounding and potentially contaminate food and food contact surfaces of the bar counter and the adjacent utility sink.
Recommendation: Recommend installing raised barriers from the counter surrounding the handwash station to retain any water dripping from the bulkhead in front to the front counter edge of the sink, and preventing that water entering the adjacent preparation counter or sink.

Violation: Two upper combination ovens had damaged gaskets on the interior of the doors, making cleaning difficult.
Recommendation: Replace the damaged gaskets.

Violation: All the soda dispensers had slot-head screw fasteners attaching the underside panel where the dispensing heads were fitted. These screws were located in a splash zone.
Recommendation: Recommend contacting the manufacturer's representative about the correction to this item, as it requires their expertise.

Violation: Excess sealant was noted on the back of the tilting pan, making cleaning difficult.

Site: Bar-Bars - Wavebands
Violation: A large hole was noted in the interior of the end storage cabinet. Computer wires passed through the hole. There was a void space between the two panels, whene debris could collect, making cleaning difficult.
Recommendation: Ensure that nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Site: Galley-Main Galley - Animator's (Pastry)
Violation: The thermometer to the ice cream freezer was missing. There was no food in the unit at the time of the inspection.
Recommendation: In a mechanically refrigerated or hot-food storage unit, ensure that the sensor of a temperature measuring device is located to measure the air temperature in the warmest part of a mechanically refrigerated unit and in the coolest part of a hot-food storage unit.

Violation: A large amount of soiled pots and pans were stored on deck stands outside the potwash area.
Recommendation: Ensure that drainboards, utensil racks, or tables large enough to accommodate all soiled and cleaned items that may accumulate during hours of operation are provided for necessary utensil holding before cleaning and after sanitizing.

Violation: Both ice machines were soiled with a brown and pink slimy material. Specific areas included the sides and cover panel to the ice cuber, as well as some of the pipes in the cuber sections. These ice machines were taken out of service and cleaned and sanitized immediately. According to the ship's staff and the AMOS systems records, these ice machines are cleaned every six months.
Recommendation: Ensure that food-contact surfaces of equipment and utensils are clean to sight and touch.

Violation: There was no coving at the juncture of the deck with either the front bar counter foundation or the back bar bulkhead in either Pluto's or Pinocchio's, making cleaning difficult. Some dirt soil was noted at the juncture of these areas in both front bars. This was specifically on the workers side of the bar.
Recommendation: Ensure that bulkhead and deck junctures are coved (including galleys, pantries, deck/counter junctures at buffets, bars, waiter stations, and dining room work counters).

Violation: The deck material in most food service and some food storage areas was damaged (chipped, rough or peeling), especially around scuppers, equipment mounts and pipes that are attached to the deck, making cleaning difficult. The deck coating was also peeling at several bulkhead-deck junctures, leaving areas where food and debris could collect, making cleaning difficult.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas, are maintained in good repair.

Recommendation: Ensure that a plumbing system in a food area is maintained in good repair.

Violation: There was less than 220 lux of artificial light available at the aft beverage stations for lines 1 and 2.
Recommendation: Ensure that the light intensity is at least 220 Lux (20 foot candles) in bars and at dining room waiter stations during periods of cleaning.

Violation: The door from the bar to the pantry behind was pinned open during active service in the front bar and dishwashing, pizza preparation, and clean dish storage in the pantry behind.
Recommendation: Ensure that entry points where pests may enter the food areas are protected. If the door cannot be screened or made a swing door, suggest installing an air-curtain at the door threshold.

Site: Other-Deck 11 Rain Forest Spa - Fountain
Violation: The main water basin for the decorative fountain in the Rain Forest Spa was soiled with dirt debris in the bottom where water was standing. Additionally, there was a soiled ring around the upper side walls of this basin.
Recommendation: Ensure that air handling units are kept clean.
