Site: Medical-GI Logs
Violation: For the voyages ending December 17 and 20 - 22, 2007, there were no GI logs maintained. For all of these voyages there were no passenger or crew cases reported. The ship did not leave the United States on any of these voyages.
Recommendation: Ensure that a standardized gastrointestinal illness surveillance log for each cruise is maintained daily by the master of the vessel, the medical staff, or other designated staff.

Site: Bar-Grand Pacific Bar
Violation: The backflow preventer on the carbonator was oriented with the atmospheric vent facing upward. The vent was also capped.
Recommendation: Orientate the vent of this backflow preventer in a downward fashion and remove the cap.

Violation: The vent for the backflow device for the multi-flow unit was not pointed downward.
Recommendation: Orientate the vent for this device in a downward fashion.

Site: Medical-Documentation of Follow-Up of Close Contacts of Crew GI Cases
Violation: Documentation of follow-up of close contact of crew gastrointestinal illness cases was located in the crew medical records. However, the documentation did not include the 48-hour follow-up. Both initial and 24-hour follow-up periods were documented.
Recommendation: Ensure that medical staff conduct daily verbal interviews with asymptomatic crew until 48 hours after onset of the ill crew members symptoms.

Site: Galley-Potwash Area
Violation: Two cutting boards were gouged along the edges, leaving jagged edges where food debris could collect, and making cleaning difficult.
Recommendation: Ensure that surfaces such as cutting blocks and boards that are subject to scratching and scoring are resurfaced if they no longer can be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.

Violation: One cutting board was noted pitted and scored, making cleaning difficult.
Recommendation: Ensure that surfaces such as cutting blocks and boards that are subject to scratching and scoring are resurfaced if they no longer can be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.

Violation: The mechanical potwash was posted out of order. The ship is awaiting spare parts.
Recommendation: Repair this unit as soon as the spare parts arrive.

Violation: A small amount of debris was noted between the teeth of one of the vegetable slicer components.
Recommendation: Ensure that food-contact surfaces of equipment and utensils are clean to sight and touch.

Violation: Food particles were noted in the handwash sink basin.
Recommendation: Ensure that handwashing facilities are used for no other purpose and are accessible at all times.

Violation: There were no paper towels at the handwash station next to the galley entrance. This item was corrected at the time of the inspection.
Recommendation: Ensure that each handwashing facility has a supply of hand-cleansing soap or detergent and a supply of single-service paper towels available.

Site: Provisions-Beer Walk-in Refrigerator
Violation: A bare wood board was noted underneath beer kegs. There was cardboard material under some stacked beer kegs. These items are not considered to be easily cleanable
Recommendation: Remove the bare wood and cardboard material from underneath the beer kegs.

Site: Other-Officer's Mess
Violation: The waiter station in this area was not coved. The deck immediately in front of the waiter station was carpeted to the base of the cabinet (not easily cleanable).
Recommendation: Ensure that bulkhead and deck junctures are coved (including galleys, pantries, deck/counter junctures at buffets, bars, waiter stations, and dining room work counters). Ensure that surfaces subject to routine splashes, spillage, or other soiling during normal use have easily cleanable features.

Violation: The bulkhead profile strip on the left side above the deep fat fryers was loose, making cleaning difficult.
Recommendation: Reattach the loose bulkhead profile strip.

Site: Galley-Juice Station - Magenta
Violation: A small potable water leak was noted in the technical compartment beneath the large coffee machine. There was scale build-up, indicating the leak was going for some time.
Recommendation: Ensure that a plumbing system in a food area is maintained in good repair.
