Site: Other-GENERAL REMARKS
Violation: DURING TODAY'S INSPECTION, IT WAS NOTED THAT THE POTABLE WATER SYSTEM, POOLS AND SPAS, CHILD ACTIVITY CENTER, IPM AND OVERALL FOOD AND BAR OPERATIONS WERE OUTSTANDING. THE DISHWASHING OPERATION RESULTS WERE EXEMPLARY. STAFF AND CREW WERE VERY KNOWLEDGEABLE ABOUT THE PUBLIC HEALTH ASPECTS OF THEIR VARIOUS JOBS WHEN QUESTIONED BY USPH OFFICERS DURING THE INSPECTION.

Violation: MILK IN REACH-IN COOLER IN A DEFROST CYCLE HAD INTERNAL TEMPERATURE OF 43 - 48F. MILK WAS REMOVED FROM UNIT AND BLAST CHILLED.
Recommendation: 7.3.5.3.1.1 Potentially hazardous food shall be maintained: (2) At 5C (41F) or less.

Site: Other-LIDO - DISHWASHING
Violation: THERMOMETERS ON DISHWASHING AND GLASSWASHING MACHINES WERE 10 - 20F OUT OF CALIBRATION WHEN COMPARED TO MANUAL TEMPERATURE READING TAKEN IN WASH AND RINSE TANKS.
Recommendation: 7.5.4.1.1 Warewashing equipment shall be maintained in good repair and proper adjustment including: (1) Warewashing equipment shall be maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines. (2) Water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use.

Violation: HAND WASHING SIGN WAS NOT IN PLACE AT ONE OF THE HAND WASHING SINKS IN THE BUFFET SERVICE AREA.
Recommendation: 7.7.1.1.7 A sign stating "WASH HANDS OFTEN" in a language that the food employees understand shall be posted over hand washing sinks.

Violation: POURED DECK COVERING IN VARIOUS AREAS SUCH AS LIDO PANTRIES, HOT GALLIES, DISH WASHING, AND POT WASHES WAS IN POOR REPAIR. NOTE: A NEW TYPE OF POURED DECK COATING WAS BEING INSTALLED IN SEVERAL BARS AND PANTRIES AS A TEST TO CORRECT THIS PROBLEM. LOOSE PROFILE STRIPS AND SEAM SEALANT WERE NOTED IN SEVERAL FOOD AREAS, PARTICULARLY AROUND BULKHEAD MOUNTED COOKING EQUIPMENT IN THE LIDO.
Recommendation: 7.7.4.2.3 Decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas, shall be maintained in good repair.
