Violation: THE FAR POINT ANALYZER CHART RECORDER RECORDS DID NOT INDICATE THAT THE UNIT WAS CALIBRATED ON 11/21 AND 11/22/03.
Recommendation: 5.5.1.2.1 The halogen analyzer-chart recorder shall be properly maintained, operated, and calibrated daily in accordance with the manufacturer's instructions.

Site: Other-POTABLE WATER
Violation: THE POTABLE WATER TANKS WERE INSPECTED, MAINTAINED, CLEANED, AND DISINFECTED EVERY 6 MONTHS. THE PROCEDUE FOR DISINFECTION WAS NOT IN ACCORDANCE WITH THE GUIDELINES WHICH REQUIRE 50 PPM FOR 4 HOURS. THE VESSEL WAS SPRAYING ON 50 PPM AND CLOSING THE TANK. THE TANKS WERE LEFT UNFILLED FOR 4 HOURS. THIS METHOD DOES NOT ENSURE THAT THE DISINFECTANT REMAINS ON THE SURFACES FOR THE REQUIRED 4 HOURS. THIS WAS NOTED DURING THE LAST INSPECTION HOWEVER THE FREQUENCY THEN WAS ONCE PER YEAR.
Recommendation: 5.3.4.1.4 Disinfection following potential contamination shall be accomplished by increasing free residual halogen to at least 50 mg/L (ppm) throughout the affected area and maintaining this concentration for 4 hours.

Violation: THE TESTING FREQUENCY DURING BUNKERING WAS SLIGHTLY MORE THEN 1 HOUR APART FOR A FEW DAYS SINCE THE LAST INSPECTION.
Recommendation: 5.2.1.2.2 Free residual halogen monitoring shall be performed at least hourly during the bunkering of potable water and performed at least once every 4 hours during the onboard production of potable water.

Violation: HOSES WERE NOT CAPPED OR COUPLED IN THE BUNKER STATION HOSE STORAGE LOCKERS. THIS WAS CORRECTED DURING THE INSPECTION.
Recommendation: 5.3.3.2.5 Potable water hoses shall be stowed with the ends capped, on reels, or racks in potable water hose lockers.

Violation: POTABLE WATER LINES WERE NOT STRIPED BLUE IN THE FOLLOWING LOCATIONS: PHOTO LABORATORY; MOORING DECK AFT HOSE CONNECTION POINT; FAN ROOM 5-4 HOT WATER LINE.
Recommendation: 5.3.2.1.1 Potable water piping shall be painted light blue or striped with 15 cm (6 inches) light blue bands or a light blue stripe at fittings on each side of partitions, decks, and bulkheads and at intervals not to exceed 5 m (15 feet) in all spaces, except where the decor would be marred by such markings.

Violation: THE WMF COFFEE MACHINE POTABLE WATER INLET LINE WAS NOT PROTECTED WITH A BACKFLOW PREVENTION DEVICE OR AIR GAP. THE INLET LINE IS SUBMERGED AND A CHEMICAL IS ADDED TO THE MACHINE DURING THE CLEANING PROCESS. A BACKFLOW PREVENTION DEVICE WAS INSTALLED DURING THE INSPECTION.
Recommendation: 5.7.1.2.6 Backflow preventers shall be provided on all fixtures using potable water and which have submerged inlets.

Violation: THE POTABLE WATER INLET LINES TO TWO WMF COFFEE MAKERS WERE NOT PROTECTED WITH BACKFLOW PREVENTION DEVICES OR AIR GAPS. THE INLET LINES ARE SUBMERGED AND CHEMICALS ARE ADDED TO THE MACHINE DURING THE CLEANING PROCESS. THE BACKFLOW PREVENTION DEVICES WERE INSTALLED DURING THE INSPECTION.
Recommendation: 5.7.1.2.6 Backflow preventers shall be provided on all fixtures using potable water and which have submerged inlets.

Violation: THE FREE CHLORINE RESIDUAL IN SWIMMING POOL 2 WAS TESTED AT 0.78. THE POOL WAS PUT OUT OF SERVICE. THIS WAS CORRECTED DURING THE INSPECTION.
Recommendation: 6.2.2.1.1 A free residual halogen of >1.0 and <3.0 mg/L (ppm) shall be maintained in recirculated swimming pools.

Violation: ON 04/25/04 A GAP WAS NOTED IN THE HALOGEN RESIDUAL TESTING RECORDS FOR WHIRLPOOL SPA 01. BETWEEN 3 A.M. AND 10 A.M. NO TESTS WERE TAKEN AND THERE WAS NO INDICATION THAT THE WHIRLPOOL SPA WAS CLOSED.
Recommendation: 6.2.2.2.2 Residual halogen logs shall be maintained with residuals measured and recorded every 4 hours during operation.

Violation: THREE DENTED CANS OF FOOD WERE NOTED IN THE DRY STORAGE AREA OF THE BUFFET STATION.
Recommendation: 7.3.2.2.5 Food packages shall be in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants. Canned goods with dents on end or side seams may not be used.

Violation: THE TIME AS A CONTROL PLAN INDICATED THAT THE UNDERCOUNTER HOT CABINETS WERE ON TEMPERATURE CONTROL WHILE THE STAFF INDICATED THAT THE FOODS IN THESE CABINETS WERE UNDER TIME CONTROL.
Recommendation: Ensure that the time control plan reflects the procedures on the vessel.

Violation: RAW CHICKEN WAS STORED OVER RAW BACON IN THE UNDERCOUNTER REFRIGERATION UNIT UNDER THE KNIFE LOCKER. THIS WAS CORRECTED DURING THE INSPECTION.
Recommendation: 7.3.3.2.1.1 Food shall be protected from cross-contamination by: (2) Separating types of raw animal foods from each other such as beef, fish, lamb, pork, and poultry during storage, preparation, holding, and display by using separate equipment for each type, or arranging each type of food in equipment so that cross-contamination of one type with another is prevented, and preparing each type of food at different times or in separate areas.

Violation: A SMALL PAPER CUP WAS NOTED IN THE PEPPER CONTAINER IN THE STARBOARD BEVERAGE STATION CABINET. THIS WAS CORRECTED DURING THE INSPECTION.
Recommendation: 7.3.3.6.2.1 Condiments shall be protected from contamination: (1) By being kept in dispensers that are designed to provide protection, protected food displays provided with the proper utensils, original containers designed for dispensing, or individual packages or portions.

Violation: SEVERAL OF THE RESIN COATED BUFFET DISHES HAD GOUGES AND CRACKS IN THE RESIN, MAKING THEM DIFFICULT TO CLEAN.
Recommendation: 7.4.1.1.2 Materials that are used in the construction of multiuse utensils and food-contact surfaces of equipment shall be: (1) Durable, corrosion-resistant, and nonabsorbent; (2) Sufficient in weight and thickness to withstand repeated warewashing; (3) Finished to have a smooth, easily cleanable surface; and (4) Resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition. 7.4.2.2.1 Multiuse food-contact surfaces shall be: (1) Smooth; (2) Free of breaks, open seams >1 mm (1/32 inch), cracks, chips, inclusions, pits, and similar imperfections; (3) Free of sharp internal angles, corners, and crevices; (4) Finished to have smooth welds and joints; and (5) Accessible for cleaning and inspection by one of the following methods without being disassembled, by disassembling without the use of tools, or by easy disassembling with the use of handheld tools commonly available to maintenance and cleaning personnel such as screwdrivers, pliers, open-end wrenches, and Allen wrenches.

Recommendation: 7.5.4.1.1 Warewashing equipment shall be maintained in good repair and proper adjustment including: (1) Warewashing equipment shall be maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines. (2) Water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use.

Recommendation: 7.5.2.2.3 A warewashing machine shall be provided with an easily accessible and readable data plate affixed to the machine by the manufacturer that indicates the machine's design and operating specifications including the: (1) Temperatures required for washing, rinsing, and sanitizing; (2) Pressure required for the fresh water sanitizing rinse; and (3) Conveyor speed for conveyor machines or cycle time for stationary rack machines.
