Violation: OTHER WATER ANALYZERS WERE ALSO OUT OF CALIBRATION. THE BUNKER ANALYZER READ 2.34 AND THE ACTUAL TEST WAS MEASURED AT 1.60 PPM.
Recommendation: Calibrate all halogen analyzers, other than the distribution analyzers, before use.

Violation: THE FAR POINT ANALYZER REGISTERED 1.06 PPM, WHEN IT WAS ACTUALLY TESTED IT WAS 0.42 PPM.
Recommendation: 5.5.1.2.3 The free residual halogen measured by the halogen analyzer shall be 0.2 mg/L (ppm) of the free residual halogen measured by the manual test.

Violation: THE TEST RESULTS FOR THE REDUCED PRESSURE ASSEMBLY BACKFLOW PREVENTERS WERE INCOMPLETE.
Recommendation: 5.7.2.2.2 Backflow prevention devices requiring testing, for example reduced pressure backflow preventer and double check valves with test cocks, shall be inspected and tested with a test kit at least annually. Test results showing the pressure differences on both sides of the valves shall be maintained for each device.

Recommendation: 7.5.2.2.8 If hot water is used for sanitization in manual warewashing operations, the sanitizing compartment of the sink shall be: (1) Designed with an integral heating device that is capable of maintaining water at a temperature not less than 77C (171F); and (2) Provided with a rack or basket to allow complete immersion of equipment and utensils into the hot water.

Violation: THE FINAL RINSE TEMPERATURE WAS TESTED AT 164F. THE POTWASH WAS NOT IN ACTIVE USE AT THE TIME. THE TEMPERATURE WAS LATER INCREASED TO 169F.
Recommendation: 7.5.6.1.2 In a mechanical operation, the temperature of the fresh hot water sanitizing rinse as it enters the manifold may not be more than 90C (194F), or less than: (1) For a stationary rack, single temperature machine, 74C (165F); or (2) For all other machines, 82C (180F). (3) A utensil surface temperature of 71C (160F) as measured by an irreversible registering temperature indicator shall be achieved. (4) The maximum temperature of 90C (194F), does not apply to the high pressure and temperature systems with wand-type, hand-held, spraying devices used for the in-place cleaning and sanitizing of equipment such as meat saws.

Violation: THE BULKHEADS IN THE FRESH VEGETABLES AND FRESH FRUITS WALK-IN REFRIGERATORS WERE DAMAGED CREATING SEAMS AT THE BULKHEAD DECK JUNCTURES. ALUMINUM TAPE HAD BEEN PLACED OVER THE SEAMS BUT THE TAPE WAS LOOSE IN SEVERAL AREAS. LONG TERM REPAIRS ARE PLANNED.
Recommendation: Reseal the open seams in these walk-ins.

Violation: THE ORANGE SAND BERMS USED TO KEEP WATER FROM GOING DOWN THE ELEVATOR SHAFT DURING CLEANING WERE STORED ON THE DECK AFTER CLEANING.
Recommendation: 7.7.7.1.2 Maintenance tools such as mops, brooms, and similar items shall be stored in a designated locker so they do not contaminate food; food-contact surfaces of utensils; and equipment; linens, and single-service and single-use articles.
