Violation: THE OVERALL RECORD KEEPING FOR THE POTABLE WATER, SWIMMING POOLS AND WHIRLPOOL SPA HALOGEN MONITORING WERE OUTSTANDING.

Violation: THE CUTTING BOARDS WERE PITTED AND SCRATCHED.
Recommendation: 7.4.5.1.3 Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they no longer can be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.

Violation: LOOSE PEELING SEALANT AND OPEN SEAMS WERE NOTED ON THE BULKHEADS AND IN THE VENTILATION HOODS.
Recommendation: 7.4.1.1.9 Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.

Violation: THREE OUT OF FOUR SPRAY NOZZLES ON THE FINAL RINSE ARM WERE CLOGGED.
Recommendation: 7.5.4.1.1 Warewashing equipment shall be maintained in good repair and proper adjustment including: (1) Warewashing equipment shall be maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines. (2) Water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use.

Violation: THREE OUT OF FOUR SPRAY NOZZLES ON THE FINAL RINSE ARM WERE NOT OPERATIONAL. THE WASH AND SANITIZING TEMPERATURES WERE SUFFICIENT BUT THE SPRAY PATTERN WAS NOT ADEQUATE TO ENSURE THAT EVERY DISH WAS BEING SANITIZED.
Recommendation: The final rinse spray nozzles should be free of all obstructions to ensure all dishes are sanitized properly.

Violation: ENSURE THAT THE DOUGH ROLLER BELTS ARE ALLOWED TO AIR DRY BETWEEN THE METAL SUPPORT AND THE NON-FOOD CONTACT SURFACE OF THE BELT.
Recommendation: 7.5.7.1.1 After cleaning and sanitizing, equipment and utensils shall be air-dried or adequately drained before contact with food.

Violation: THE DECKS HAD SOME MISSING GROUT BETWEEN THE TILES MAKING CLEANING DIFFICULT.
Recommendation: 7.7.4.1.1 Decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas shall be constructed and maintained for easy cleaning.
