Violation: ON 11/18-20/2003, THE ANALYZER CHART RECORDER CHARTS HAD A RANGE OF 0-50 PPM.
Recommendation: 5.5.2.1.1 Halogen analyzer-chart recorder charts shall have a range of 0.0 to 5.0 mg/L (ppm) and have a recording period of 24 hours.

Violation: THE HALOGEN DEMAND TEST AND PH TEST TAKEN PRIOR TO BUNKERING WERE EITHER NOT PERFORMED OR NOT RECORDED.
Recommendation: 5.2.1.2.1 A halogen demand test and pH shall be conducted on the shore-side water supply before starting the bunkering process to establish the correct halogen dosage.

Violation: THE FREE CHLORINE RESIDUAL IN THE MAIN POOL WAS MEASURED AT 0.48 PPM BY THE INSPECTOR. A SECOND TEST WAS TAKEN BY THE INSPECTOR AND MEASURED 0.53 PPM. THE POOL WAS OPEN AT THE TIME OF THE INSPECTION. IT WAS STATED THAT THE TEST KIT USED TO MEASURE THE CHLORINE LEVELS IN THE POOLS ONLY TESTS FOR TOTAL CHLORINE, NOT FREE CHLORINE AS SPECIFIED IN THE VSP OPERATIONS MANUAL. THE ENGINEER'S TEST MEASURED 1.25 PPM AND 1.63 PPM.
Recommendation: 6.2.2.1.1 A free residual halogen of >1.0 and <3.0 mg/L (ppm) shall be maintained in recirculated swimming pools. 6.1.1.2.3 No bathers shall be allowed to use the pool before a free residual halogen of 1.0 mg/L (ppm) is achieved.

Violation: CHILDREN IN DIAPERS WERE NOTED IN THE MAIN POOL. THE FACILITIES MANAGER INSTRUCTED THE PARENTS TO REMOVE THE CHILDREN FROM THE POOL.
Recommendation: 6.4.1.3.1 Children in diapers or who are not toilet trained are not permitted in the public swimming pools and whirlpool spas.

Site: Other-WINDJAMMER BUFFET
Violation: YOGURT IN REFRIGERATOR R-11-16 WAS TESTED AT 53F. TWO CARTONS OF MILK IN THE SAME REFRIGERATOR WERE TESTED AT 54F AND 49F. IT WAS STATED BY THE WINDJAMMER MANAGER THAT THESE ITEMS HAD BEEN PLACED IN THE REFRIGERATOR THE NIGHT BEFORE THE INSPECTION. THE ITEMS IN THIS REFRIGERATOR WERE USED AS BACK-UP FOR THE BUFFET LINE AND WERE ON TEMPERATURE CONTROL. THE FOODS WERE DISCARDED DURING THE INSPECTION.
Recommendation: 7.3.5.3.1.1 Potentially hazardous food shall be maintained: (1) At 60C (140F) [roasts 54C (130F)] or above; or (2) At 5C (41F) or less.

Violation: BREAD, ROLLS, AND CONDIMENTS WERE NOT ADEQUATELY PROTECTED BY THE PORTABLE SNEEZE GUARDS THROUGHOUT THE BUFFET AREA. THIS WAS NOTED ON THE LAST INSPECTION.
Recommendation: 7.3.3.6.1 Food on display shall be protected from contamination by the use of packaging; counter, service line, or salad bar food guards; display cases; or other effective means.

Site: Other-DECK 4 GALLEY - SOUP STATION
Violation: ONE WORKER WAS OBSERVED SETTING A FOOD BIN ON THE DECK AND DRAINING STOCK FROM A LARGE SOUP KETTLE INTO IT. HE THEN SET A STAINLESS STEEL BUCKET ON THE DECK BELOW THE NEXT SOUP KETTLE AND DRAINED STOCK INTO THE BUCKET AND TRANSFERRED IT TO ANOTHER CONTAINER ON THE COUNTER.
Recommendation: It is suggested that deck stands be used when draining stock out of the large soup kettles, so that the containers are not directly placed on the deck.

Violation: THE GASKET ON TWO OF THE DOORS ON REFRIGERATOR R-11-16 HAD BEEN REMOVED, SO THAT THE DOORS DID NOT CLOSE TIGHTLY. THE AMBIENT TEMPERATURE IN THE REFRIGERATOR WAS 58F.
Recommendation: 7.4.5.1.1.1 Food-contact equipment shall be maintained in good repair and proper adjustment including: (1) Equipment shall be maintained in a state of repair and condition that meets the materials, design, construction, and operation specifications of these guidelines. 7.4.3.1.1 Equipment for cooling and heating food, and holding cold and hot food, shall be sufficient in number and capacity to maintain specified potentially hazardous food temperatures.

Violation: POACHED EGGS WERE HELD IN A PAN IN AN ICE BATH AT INTERNAL TEMPERATURES RANGING FROM 45-55 F. ONLY THE BOTTOM SURFACE OF THE PAN WAS IN CONTACT WITH THE ICE.
Recommendation: 7.4.3.1.1 Equipment for cooling and heating food, and holding cold and hot food, shall be sufficient in number and capacity to maintain specified potentially hazardous food temperatures. The practice of using an ice bath is acceptable as long as the internal temperature of the item(s) placed in the ice bath can be maintained at or below 41F.

Violation: CONTAINERS OF CRUMBLED CHEESE, HAM, AND SMOKED SALMON WERE STORED IN AN ICE BATH AT THE OMELET STATION WITH PRODUCT TEMPERATURES FROM 50-57F. ADDITIONALLY, AN OPENED QUART CONTAINER OF PASTEURIZED LIQUID EGG PRODUCT WAS STORED ON THE ICE BATH WITH A PRODUCT TEMPERATURE OF 80F. IN EACH CASE THE FOOD CONTAINERS HAD ONLY THE BOTTOM SURFACE IN CONTACT WITH THE ICE AND ALL WERE SAID TO HAVE BEEN ON THE PREPARATION LINE FOR 2 HOURS.
Recommendation: It is suggested that these items be placed on a time as a control plan, since it was indicated that they are only served over a three hour period.

Violation: THE SMALL FLOOR MIXER AT THE WALK-IN REFRIGERATOR WAS POSTED OUT OF ORDER. PARTS WERE BEING ORDERED, BUT THIS EQUIPMENT WAS IN DISREPAIR FOR A PERIOD OF 4 MONTHS.
Recommendation: Repair this unit.

Violation: THE EXTERIOR EDGE OF SEVERAL OF THE LARGE SERVING TRAYS HAD PEELING, CRACKED, AND BROKEN MATERIAL, MAKING THEM DIFFICULT TO CLEAN. NEW TRAYS HAVE BEEN ORDERED.
Recommendation: 7.4.2.2.6 Nonfood-contact surfaces shall be free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Violation: A CARDBOARD CONTAINER OF PLASTIC WRAP WAS NOTED ON A PREPARATION COUNTER IN THE HOT GALLEY.
Recommendation: 7.4.1.1.9 Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.

Violation: DURING ACTIVE USE, THE MOUNTED FINAL RINSE THERMOMETER ON THE FLIGHT-TYPE CONVEYOR DISHWASHER REGISTERED 20F OUT OF CALIBRATION.
Recommendation: 7.5.2.1.1 Water temperature measuring devices: (1) That are scaled in Celsius or dually scaled in Celsius and Fahrenheit shall be designed to be accurate to 1.5C in the intended range of use. (2) That are scaled only in Fahrenheit shall designed to be accurate to 3F in the intended range of use.

Violation: THERE WAS A CONTINUOUS WATER LEAK FROM THE PIPE BELOW THE SANITIZING SINK.

Violation: HANDWASH STATIONS IN VARIOUS GALLEY AND PANTRY AREAS THROUGHOUT THE SHIP WERE POSTED OUT OF ORDER DUE TO FAILING SENSOR COMPONENTS. IN SOME AREAS TWO HANDWASH STATIONS WERE IN DISREPAIR, AND IN THE DECK 4 GALLEY THE 3 SINK BASIN HANDWASH STATION DID NOT FUNCTION. STAFF HAVE ORDERED THE SENSORS AND ARE INSTALLING THEM AS THEY ARRIVE.
Recommendation: Repair the handwash stations as new equipment arrives.

Site: Other-DECK 4 GALLEY - PORT HOT LINE
Violation: WATER WAS DRIPPING FROM THE BAIN MARIE IN TECHNICAL COMPARTMENT G0407/04-52 ONTO THE DECK OUTSIDE OF THE DECK SINK BELOW. THE DRAIN PIPE WAS REMOVED FROM THE DRAIN AND SET INSIDE THE COMPARTMENT. THIS SAME CONDITION WAS OBSERVED IN DECK 5 GALLEY BAIN MARIE COMPARTMENTS G0507/04-37 AND 39.
Recommendation: 7.7.3.3.1 A plumbing system in a food area shall be maintained in good repair. Replace the pipe so that the water can drain properly into the deck drain.

Site: Other-DECK 4 GALLEY - PASTRY
Violation: THE DRAIN FROM THE EVAPORATIVE CONDENSER IN THE WALK-IN FREEZER WAS FROZEN AND DETACHED FROM THE BULKHEAD. HEAVY ICE ACCUMULATION WAS PRESENT AT THE POINT WHERE IT PENETRATED THE BULKHEAD BEHIND THE UNIT.
Recommendation: 7.7.3.3.1 A plumbing system in a food area shall be maintained in good repair. Repair the drain pipe so that the condensate can drain properly.

Violation: CONDENSATE WAS NOTED ON THE DECKHEAD ABOVE THE SANITIZE SINK IN THE POTWASH AREA.
Recommendation: 7.4.3.2.1 Ventilation hood systems and devices shall be sufficient in number and capacity to prevent grease or condensation from collecting on bulkheads and deckheads.
