Violation: THE RISOTTO STORED IN THE REACH-IN REFRIGERATOR WAS PREPARED THREE DAYS EARLIER AND HAD A TEMPERATURE READING OF 47 F.
Recommendation: 7.3.5.3.1.1 Potentially hazardous food shall be maintained: (1) At 60C (140F) [roasts 54C (130F)] or above,; or (2) At 5C (41F) or less.

Violation: THE INTERNAL TEMPERATURE READING OF THE SWISS CHEESE STORED IN THE REACH-IN REFRIGERATOR WAS 46 F.
Recommendation: 7.3.5.3.1.1 Potentially hazardous food shall be maintained: (1) At 60C (140F) [roasts 54C (130F)] or above,; or (2) At 5C (41F) or less.

Violation: THREE SMALL PANS OF BAKED CHOCOLATE CAKE WERE STORED UNCOVERED UNDER THE FAN UNIT.
Recommendation: 7.3.3.5.1 Food shall be protected from contamination by storing the food: (1) In a clean, dry location; (2) Where it is not exposed to splash, dust, or other contamination; and (3) At least 15 centimeters (6 inches) above the deck.

Violation: SEVERAL REFRIGERATION UNITS WERE NOT BEING MAINTAINED IN A STATE OF REPAIR TO PROVIDE ADEQUATE COOLING TEMPERATURES FOR THE FOODS INSIDE OF THE UNITS.
Recommendation: 7.4.5.1.1.1 Food-contact equipment shall be maintained in good repair and proper adjustment including: (1) Equipment shall be maintained in a state of repair and condition that meets the materials, design, construction, and operation specifications of these guidelines.

Violation: THE CUTTING BOARDS WERE SCRATCHED AND PITTED MAKING THE SURFACES NON- EASILY CLEANABLE.
Recommendation: 7.4.5.1.3 Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they no longer can be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.

Recommendation: 7.7.4.1.1 Decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas shall be constructed and maintained for easy cleaning.
