Violation: IN DEVELOPING THE CORRECTIVE ACTION STATEMENT FOR THIS INSPECTION, CRITICAL-ITEM DEFICIENCIES (DESIGNATED WITH YES IN CRITICAL COLUMN (WORTH 3 - 5 POINTS), WHETHER DEBITED OR NOT, SHOULD INCLUDE STANDARD OPERATING PROCEDURES AND MONITORING PROCEDURES IMPLEMENTED TO PREVENT THE RECURRENCE OF THE CRITICAL DEFICIENCY. Site: Other-ATLANTIC DISHWASH AREA
Violation: THE BACKFLOW PREVENTION DEVICE WAS LEAKING ON THE SPRAY HOSE ON THE PRE WASH SINK.
Recommendation: 5.7.2.2.1 Backflow prevention devices should be periodically inspected and any failed units shall be replaced.

Site: Other-GARBAGE ROOM
Violation: THE POTABLE WATER LINES INSIDE THE GARBAGE ROOM WERE NOT STRIPED BLUE. IT WAS DIFFICULT TO DETERMINE WHAT LINES WERE POTABLE AND TECHNICAL WATER.
Recommendation: 5.3.2.1.1 Potable water piping shall be painted light blue or striped with 15 cm (6 inches) light blue bands or a light blue stripe at fittings on each side of partitions, decks, and bulkheads and at intervals not to exceed 5 m (15 feet) in all spaces, except where the decor would be marred by such markings.

Violation: ONE INDIVIDUAL PINT OF MILK ON THE BUFFET LINE WAS FOUND WITH AN INTERNAL PRODUCT TEMPERATURE OF 56°F. THE INDIVIDUAL CONTAINERS OF DAIRY PRODUCTS WERE NOT ON THE TIME AS A CONTROL PLAN BUT WERE ON TEMPERATURE CONTROL AS STATED BY THE STAFF.
Recommendation: Recommend including the individually packed dairy products on the time as a control plan and discard any unused items that are placed on the buffet line.

Violation: THE DOUGH SHEETER CANVAS WAS SHOWING SIGNS OF WEAR WITH SMALL HOLES IN THE CANVAS MAKING IT DIFFICULT TO CLEAN. STAFF STATED THE CANVAS IS DUE FOR REPLACEMENT IN 1/2 MONTH AND IS ON A 3 MONTH REPLACEMENT SCHEDULE.
Recommendation: 7.4.2.2.1 Multiuse food-contact surfaces shall be: (1) Smooth; (2) Free of breaks, open seams >1 mm (1/32 inch), cracks, chips, inclusions, pits, and similar imperfections; (3) Free of sharp internal angles, corners, and crevices; (4) Finished to have smooth welds and joints; and (5) Accessible for cleaning and inspection by one of the following methods without being disassembled, by disassembling without the use of tools, or by easy disassembling with the use of handheld tools commonly available to maintenance and cleaning personnel such as screwdrivers, pliers, open-end wrenches, and Allen wrenches.

Violation: THE VENTILATION HOOD ABOVE THE FRYER STATION HAD LOOSE PEELING SEALANT. TO INCREASE THE LONGEVITY, RECOMMEND THAT THE LARGER GAPS BE PROFILED INSTEAD OF USING SOFT SEALANT.
Recommendation: 7.4.2.1.2 Nonfood-contact surfaces of equipment and utensils shall be designed and constructed to be durable and to retain their characteristic qualities under normal use conditions.

Site: Other-LIDO / GRILL / WALK-IN REFRIGERATOR
Violation: ONE OF THE BOLTS WAS MISSING ON THE CONDENSATE DRIP PAN OF THE CONDENSER UNIT.
Recommendation: Replace the missing bolt. 7.4.5.1.2 Nonfood-contact equipment shall be maintained in good repair and proper adjustment including: (1) Equipment shall be maintained in a state of repair and condition that meets the materials, design, construction, and operation specifications of these guidelines.

Violation: THE FINAL RINSE SPRAY PATTERN DID NOT COVER THE WHOLE DISH ON THE DISHWASH UNIT IN THE CREW GALLEY.

Violation: THE MOUNTED FINAL RINSE SINK THERMOMETER WAS OUT OF CALIBRATION. THE MANUAL READING WAS 178°F AND THE MOUNTED THERMOMETER READ 192°F.
Recommendation: Maintain the calibration of the mounted thermometer to within +/- 3°F.

Violation: THE FINAL RINSE SPRAY PATTERN DID NOT COVER THE WHOLE DISH ON THE DISHWASH UNIT IN THE MAIN GALLEY.
Recommendation: 7.5.4.1.1 Warewashing equipment shall be maintained in good repair and proper adjustment including: (1) Warewashing equipment shall be maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines. (2) Water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use.

Violation: THE RIGHT WASH MANIFOLD NOZZLE WAS CLOGGED. THIS WAS REPAIRED DURING THE INSPECTION.
Recommendation: 7.5.4.1.1 Warewashing equipment shall be maintained in good repair and proper adjustment including: (1) Warewashing equipment shall be maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines. (2) Water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use.

Violation: THE ICE MACHINE WAS SOILED WITH DEBRIS AND PINK MOLD INSIDE THE CUBER AND ON THE CUBER DOOR. THE CLEANING DATE WAS MARKED ON THE MACHINE OF AUGUST 12, 2003.
Recommendation: 7.3.3.4.1 Food shall only contact surfaces of equipment and utensils that are cleaned and sanitized.

Violation: THERE WAS NOT ENOUGH LANDING AREA FOR THE WAITERS TO DROP-OFF THE SOILED DISHES SO THEY WERE RESTING THEIR TRAYS ON THE TRASH CANS THAT WERE IN THE AREA.
Recommendation: Provide additional landing or rest surfaces to prevent using the trash cans as resting areas.

Violation: THE BULKHEAD PROFILE ON THE RIGHT SIDE OF THE WALK-IN REFRIGERATOR DOOR HAD BROKEN WELDS CREATING A GAP BETWEEN THE STAINLESS STEEL PANELS.
Recommendation: Reattach the profile. 7.7.4.2.3 Decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas, shall be maintained in good repair.

Violation: A PROFILE STRIP WAS LOOSE ON THE BULKHEAD BEHIND THE WASH AREA ON THE RIGHT SIDE OF THE DISHWASH UNIT.
Recommendation: 7.7.4.2.3 Decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas, shall be maintained in good repair.
