Violation: IN DEVELOPING THE CORRECTIVE ACTION STATEMENT FOR THIS INSPECTION, CRITICAL-ITEM DEFICIENCIES (DESIGNATED WITH YES IN CRITICAL COLUMN (WORTH 3 - 5 POINTS), WHETHER DEBITED OR NOT, SHOULD INCLUDE STANDARD OPERATING PROCEDURES AND MONITORING PROCEDURES IMPLEMENTED TO PREVENT THE RECURRENCE OF THE CRITICAL DEFICIENCY. PREPARE CORRECTIVE ACTION STATEMENT AS A WORD PROCESSING OR SPREADSHEET FILE WHICH WILL BE SENT TO USPHS / VSP AS AN EMAIL MESSAGE ATTACHMENT. Site: Other-POTABLE WATER
Violation: THE MANUAL TEST ON THE POTABLE WATER BUNKER LINE INDICATED A CHLORINE LEVEL OF 1.5 PPM. THE CHART RECORDER SHOWED THAT THE CHLORINE LEVEL HAD BEEN ABOVE 2.0 PPM FOR THE MAJORITY OF THE TIME PRIOR TO THE TEST. WHEN ASKED THE ENGINEER STATED THAT HE HAD JUST RECALIBRATED THE ANALYZER AND THAT IT WOULD TAKE SOME TIME FOR THE PUMP TO CATCH UP TO THE SET POINT OF 2.20 PPM. THE ANALYZER HAD BEEN CALIBRATED WHEN BUNKERING WAS STARTED. A TEST OF A PREVIOUSLY EMPTY POTABLE WATER TANK THAT WAS BEING FILLED SHOWED A CHLORINE LEVEL OF 4.3 PPM.
Recommendation: Recommend not recalibrating the bunker line analyzer during a USPHS inspection.

Site: Other-ANIMATOR GALLEY DECK 4 & CREW GALLEY
Violation: THE THREADED HOSE CONNECTIONS IN THE CHEMICAL LOCKERS WERE NOT FITTED WITH AN APPROPRIATE BACKFLOW PREVENTION DEVICE.
Recommendation: Install an appropriate backflow prevention device or remove the threads from the connections.

Violation: POTENTIALLY HAZARDOUS FOODS, CHEESECAKE AND KEY LIME PIE HAD A TEMPERATURE OF 58F AT 9 AM. THE PRODUCT HAD BEEN PREPARED AT 8:15 AND PLACED ON THE COUNTER AT ROOM TEMPERATURE. THEY WERE SCHEDULED TO BE DELIVERED TO PASSENGER CABINS AROUND 1100, APPROXIMATELY ONE HOUR BEFORE EMBARKATION. STAFF STATED THAT THE PRODUCT WAS UNDER "TIME AS A CONTROL".
Recommendation: 7.3.5.3.1.1 Potentially hazardous food shall be maintained: (1) At 60C (140F); or (2) At 5C (41F) or less.

Site: Other-PASTRY DECK 3
Violation: MORE THAN 30 TRAYS OF INDIVIDUAL SERVINGS OF CHEESE CAKE AND KEY LIME PIE WERE FOUND STORED ON A COUNTER WITH PRODUCT TEMPERATURES OF 58F. THESE ITEMS WERE PREPARED AT 8:15 AM AND WERE SCHEDULED TO BE DELIVERED TO EMBARKING PASSENGER'S CABINS. EMBARKATION WAS SCHEDULED TO BEGINS AT 1200. STAFF STATED THAT THE PRODUCT WAS ON "TIME AS A CONTROL", HOWEVER THE TIME BETWEEN WHEN TEMPERATURE CONTROL WAS STOPPED AND UNTIL THESE ITEMS WOULD BE CONSUMED BY PASSENGERS WOULD LIKELY BE MORE THAN FOUR HOURS. AFTER DISCUSSION THE TRAYS WERE MOVED TO A BLAST CHILLER AND THEN WERE GOING TO BE HELD UNDER REFRIGERATION UNTIL APPROXIMATELY 1100.
Recommendation: Hold these potentially hazardous food under temperature control until closer to embarkation time before they are placed on time control. Recommend keeping them under temperature control until at least 1100.

Site: Other-FOOD SERVICE GENERAL
Violation: MANY OF THE ICE MACHINES IN THE MAIN AND CREW GALLEYS HAD SOFT PEELING SEALANT BETWEEN THE BIN AND CUBER. SOFT PEELING SEALANT WAS ALSO NOTED IN THE CUBER AREAS. IT WAS STATED THAT THE ICE MACHINES WILL BE REPAIRED DURING AN UPCOMING DRY DOCK SCHEDULED FOR OCTOBER 2004.
Recommendation: Recommend replacing this peeling soft sealant with a food grade sealant.

Violation: THERE WERE A FEW SOILED DISHES IN THE TRITON'S KIDS CLEAN DISHWARE STORAGE AREA.
Recommendation: 7.3.3.4.1 Food shall only contact surfaces of equipment and utensils that are cleaned and sanitized.

Violation: THE EPOXY COATING ON THE DECK DRAINS THROUGHOUT THE GALLEYS WERE IN DISREPAIR AND NO LONGER EASILY CLEANABLE. NUMEROUS TECHNICAL AREAS AROUND THE DECK DRAINS WERE NOT EASILY ACCESSIBLE FOR CLEANING.
Recommendation: 7.7.4.1.1 Decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas shall be constructed and maintained for easy cleaning.

Violation: THE DISHWASH CHEMICAL HOSES WERE DRAPED ON THE DECK, MAKING CLEANING DIFFICULT.
Recommendation: Raise the hoses off of the deck.

Violation: CORROSION AND DEBRIS WAS NOTED IN THE CONDENSATE COLLECTION PAN OF AIR HANDLING UNIT AC 08-2-12. THERE WAS NO CONDENSATE NOTED IN THE PAN.
Recommendation: Ensure that the condensate collection pans are cleaned frequently and that the internal surfaces are repaired to prevent corrosion.
