Violation: MANAGEMENT AND OPERATIONS IN POTABLE WATER, FOOD SERVICE, HOUSEKEEPING, BARS, AND PEST MANAGEMENT DEPARTMENTS WAS VERY STRONG.

Violation: A NON-CONTINUOUS PRESSURE TYPE BACKFLOW PREVENTER WAS INSTALLED AT THE DECK WASHING TAP NEAR THE GREASE TRAP IN THE WATER PRESS ROOM. THE HOSE CONNECTED TO THIS TAP HAD A SPRAY RINSE NOZZLE ATTACHED.
Recommendation: Install a continuous pressure type of backflow preventer on this deck washing station.

Violation: NOT ALL OF THE NON-TESTING TYPE BACKFLOW PREVENTION DEVICES WERE WRITTEN IN THE COMPREHENSIVE LIST FOR INSPECTION.
Recommendation: Document every backflow prevention device for inculsion in your comprehensive program for inspection and maintenance.

Violation: THE BACKFLOW PREVENTER ON THE SPRAY RINSE HOSE WAS SUBMERGED BELOW THE SINK FLOOD RIM IN THE PHOTO LAB.
Recommendation: Backflow prevention device shall be installed is such a way that they cannot be submerged.

Violation: THE HOT SYRUP ON THE CHAFING DISH DISPLAY WAS NOT SHIELDED OR COVERED AND OPEN TO CONTAMINATION FROM PASSENGER COUGH OR SNEEZE.
Recommendation: 7.3.3.6.1 Food on display shall be protected from contamination by the use of packaging; counter, service line, or salad bar food guards; display cases; or other effective means.

Violation: THE COUNTERTOPS NEAR TO ALL HOT HOLDING INDUCTION TOPS HAD DIFFICULT-TO-CLEAN CRACKS THROUGH THE COMPOSITE SURFACES.
Recommendation: Repair the cracks in these counters for the time being and replace as soon as possible so they are durable.

Recommendation: 7.3.3.4.4.2 Wiping cloths shall be restricted to the following: (2) Cloths used for wiping food spills shall be dry and used for wiping food spills from tableware and single-service articles or wet and cleaned, stored in a chemical sanitizer, and used for wiping spills from food-contact and nonfood-contact surfaces of equipment.

Violation: WET WIPING CLOTHS WERE SET ON COUNTERS AT SEVERAL WAITER STATIONS BETWEEN USES, RATHER THAN IN A SANITIZING SOLUTION.

Violation: THE HANDWASH SINK WATER NEVER BECAME WARM WHEN THE INSPECTOR WAS WASHING HIS HANDS.
Recommendation: 7.7.1.1.3 A handwashing sink shall be equipped to provide water at a temperature of at least 43C (110F) through a mixing valve or combination faucet.
