Violation: THE CALIBRATION OF THE DISTRIBUTION HALOGEN ANALYZER WAS SAID TO BE PERFORMED DAILY BUT THE ONLY RECORDS AVAILABLE WERE FROM DAYS WHEN AN ADJUSTMENT WAS MADE TO THE UNIT.
Recommendation: Keep a record of all calibration checks.

Violation: IT COULD NOT BE VERIFIED WHETHER OR NOT THE WATER SUPPLY TO THE HANDWASH STATIONS IN THE AIR CONDITIONING FAN ROOMS WAS FROM THE POTABLE WATER SYSTEM. THE SUPPLY PIPING TO THE HANDWASH STATIONS WAS NOT STRIPED BLUE.
Recommendation: 5.3.2.1.1 Potable water piping shall be painted light blue or striped with 15 cm (6 inches) light blue bands or a light blue stripe at fittings on each side of partitions, decks, and bulkheads and at intervals not to exceed 5 m (15 feet) in all spaces, except where the decor would be marred by such markings.

Violation: THE VENT HOLE ON THE BACKFLOW PREVENTION DEVICE FOR THE MEN'S STEAM ROOM POTABLE SUPPLY LINE WAS PLUGGED. THE POTABLE WATER LINES FOR THE STEAM ROOM TECHNICAL LOCKERS WERE NOT STRIPED BLUE. BACKFLOW PREVENTION DEVICES WERE NOT PROVIDED ON POTABLE WATER LINES SUPPLY THE SHOWER AND TUB HOSES IN CABINS 1598, AND 1544.

Violation: THE WATER IN THE WHIRLPOOL SPAS WAS CHANGED EVERY OTHER DAY. THE RAISING OF THE HALOGEN LEVEL IN THE WHIRLPOOL SPAS TO 10 PPM FOR ONE HOUR WAS DONE EVERY OTHER DAY.
Recommendation: 6.3.1.2.1 The whirlpool spa water shall be changed daily. 6.3.2.1.1 The free residual halogen shall be increased to at least 10.0 mg/L (ppm) in whirlpool spas and circulated for at least 1 hour at the end of each day.

Violation: WHILE SEDIMENTATION TESTS WERE CONDUCTED EVERY MONTH A CORE SAMPLE OF THE FILTER MEDIA WAS NOT USED.
Recommendation: 6.3.1.1.5 The granular filters shall be opened at least monthly and examined for cracks, mounds, or holes in the filter media. A core sample of the filter media shall be inspected for excessive organic material accumulation using a recommended sedimentation method.

Violation: INDIVIDUAL NON-DAIRY CREAMERS WERE NOTED ON THE COUNTER WITH TEMPERATURES GREATER THAN 41F. IT WAS STATED THAT TIME AS A PUBLIC HEALTH CONTROL WAS USED FOR THESE ITEMS. THE CONTAINERS WERE NOT LABELED WITH THE DISCARD TIME NOR WAS A LOG AVAILABLE TO INDICATE THE LENGTH OF TIME THEY HAD BEEN OUT OF TEMPERATURE CONTROL.
Recommendation: 7.3.5.3.5 If time only, rather than time in conjunction with temperature, is used as the public health control for a working supply of potentially hazardous food before cooking, or for ready-to-eat potentially hazardous food that is displayed or held for service for immediate consumption: (1) The food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control; (2) The food shall be cooked and served, served if ready-to-eat, or discarded, within 4 hours from the time when the food is removed from temperature control; and (3) The food in unmarked containers or packages or marked to exceed a 4 hour limit shall be discarded.

Recommendation: 7.4.2.2.1 Multiuse food-contact surfaces shall be: (1) Smooth; (2) Free of breaks, open seams >1 mm (1/32 inch), cracks, chips, inclusions, pits, and similar imperfections; (3) Free of sharp internal angles, corners, and crevices; (4) Finished to have smooth welds and joints; and (5) Accessible for cleaning and inspection by one of the following methods without being disassembled, by disassembling without the use of tools, or by easy disassembling with the use of handheld tools commonly available to maintenance and cleaning personnel such as screwdrivers, pliers, open-end wrenches, and Allen wrenches.

Violation: THREE, TWO HANDLE POTS WERE FOUND MISSING ONE HANDLE EACH RESULTING IN HOLES THAT MADE THESE SURFACES DIFFICULT TO CLEAN. THE POTS WERE REMOVED FROM THE CLEAN STORAGE AREA DURING THE INSPECTION.

Violation: A LARGE AMOUNT OF SEALANT WAS USED TO PROTECT ELECTRICAL CONNECTIONS ON THE FRYER COILS OF FRYER 4811.053.1012 MAKING THE AREA DIFFICULT TO CLEAN. THE MANUFACTURER'S STAINLESS STEEL COVERS APPARENTLY HAD BEEN LOST.
Recommendation: Provide durable, non-corrosive, and easy to clean covers on these electrical connections.

Violation: THE TROLLEY USED TO STORE FRUIT BASKETS IN THE DRY STORE ROOM HAD GAPS, OPEN SEAMS AND OTHER DIFFICULT THE CLEAN FEATURES. THE TROLLEY WAS DESIGNED FOR THE STORAGE OF LINENS.

Violation: THE ICE DISPENSING AREA COVER PLATE ON SODA DISPENSER #1 WAS BROKEN MAKING THE AREA DIFFICULT TO CLEAN. ONE OF THE COVER PLATES OF THE SODA DISPENSER COVERS WAS MISSING MAKING THE AREA DIFFICULT TO CLEAN. IT WAS STATED THAT THE PARTS WERE ON ORDER AND THAT A REPRESENTATIVE OF THE MANUFACTURER WAS TO BE ONBOARD TODAY TO MAKE THE NECESSARY REPAIRS TO THE UNIT.
Recommendation: 7.4.2.1.2 Nonfood-contact surfaces of equipment and utensils shall be designed and constructed to be durable and to retain their characteristic qualities under normal use conditions.

Recommendation: Do not use the service lockers to store clean glasses, food waste, or soiled dishware/glasses. These items should be brought to an appropriately designed facility such as an ice pantry. 7.5.7.3.1 Cleaned equipment and utensils, laundered linens, and single-service and single-use articles shall be stored: (1) In a clean, dry location; (2) Where they are not exposed to splash, dust, or other contamination; and (3) At least 15 centimeters (6 inches) above the deck.
