Violation: IN DEVELOPING THE CORRECTIVE ACTION STATEMENT FOR THIS INSPECTION, CRITICAL-ITEM DEFICIENCIES (DESIGNATED WITH YES IN CRITICAL COLUMN (WORTH 3 - 5 POINTS), WHETHER DEBITED OR NOT, SHOULD INCLUDE STANDARD OPERATING PROCEDURES AND MONITORING PROCEDURES IMPLEMENTED TO PREVENT THE RECURRENCE OF THE CRITICAL DEFICIENCY. Site: Other-BACKFLOW PREVENTION
Violation: THE PRESSURE DIFFERENCES WERE NOT BEING RECORDED FOR THOSE BACKFLOW PREVENTION DEVICES REQUIRING ANNUAL TESTING.
Recommendation: 5.7.2.2.2 Backflow prevention devices requiring testing, for example reduced pressure backflow preventer and double check valves with test cocks, shall be inspected and tested with a test kit at least annually. Test results showing the pressure differences on both sides of the valves shall be maintained for each device.

Violation: A CORE SAMPLE METHOD WAS NOT BEING USED WHEN TESTING THE SAND FILTER MEDIA.
Recommendation: 6.3.1.1.5 The granular filters shall be opened at least monthly and examined for cracks, mounds, or holes in the filter media. A core sample of the filter media shall be inspected for excessive organic material accumulation using a recommended sedimentation method.

Violation: A FEW OF THE WAITER TRAYS WERE FRAYED ALONG THE EDGES, MAKING THE SURFACES DIFFICULT TO CLEAN.
Recommendation: Replace the damaged waiter station serving trays.

Violation: THE FINAL RINSE PRESSURE GAUGE WAS NOT FUNCTIONING. THE DEFECTIVE GAUGE WAS REPLACED DURING THE INSPECTION.
Recommendation: 7.5.2.1.2 Pressure measuring devices that display the pressures in the water supply line for the fresh hot water sanitizing rinse shall have increments of 7 kilopascals (1 pounds per square inch) or smaller and shall be accurate to 14 kilopascals ( 2 pounds per square inch) in the 100-170 kilopascals (15-25 pounds per square inch) range.

Violation: SEVERAL LARGE PERFORATED BAKERY SHEET PANS WERE NOTED SOILED WITH FOOD AND GREASE AND STORED ON THE CLEAN STORAGE RACK
Recommendation: 7.5.5.1.2 The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations.

Violation: ONE PREVIOUSLY CLEANED BAR GLASS WAS FOUND SOILED AND STORED AS CLEAN.

Violation: FOUR PREVIOUSLY CLEANED PLATES WERE FOUND SOILED AND STORED AT THE WAIT STATIONS. TWO OF THE PLATES WERE HEAVILY SOILED TO THE POINT OF BEING STUCK TOGETHER AND DIFFICULT TO SEPARATE.
Recommendation: 7.5.5.1.1 Food-contact surfaces of equipment and utensils shall be clean to sight and touch.

Violation: A FEW PREVIOUSLY CLEANED COFFEE CARAFES WERE FOUND TO HAVE COFFEE STAINS AROUND THE TOP INNER LIP OF THE CARAFES.
Recommendation: 7.5.5.1.1 Food-contact surfaces of equipment and utensils shall be clean to sight and touch.

Violation: SOME DECKS IN FOOD STORAGE AREAS HAD BARE SPOTS, MAKING THE AREAS DIFFICULT TO CLEAN.
Recommendation: 7.7.4.2.3 Decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas, shall be maintained in good repair.

Violation: EXCESS SEALANT WAS NOTED IN THE HOOD ABOVE THE BAIN MARIE AND FOOD PREPARATION AREAS. THE SEALANT WAS REMOVED AND THE ITEM CORRECTED DURING THE INSPECTION.
Recommendation: 7.7.4.1.1 Decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas shall be constructed and maintained for easy cleaning.

Site: Other-MAIN GALLEY - DK 5 - HOT SOUP RANGE
Violation: WATER WAS NOTED LEAKING FROM THE DECKHEAD (ADJACENT TO THE BAIN MARIE). NO FOOD ITEMS WERE IN THE AREA AT THE TIME OF THE INSPECTION. THE LEAK WAS IDENTIFIED AND CORRECTED DURING THE INSPECTION.
Recommendation: 7.7.3.3.1 A plumbing system in a food area shall be maintained in good repair.
