Site: Other-POTABLE WATER - POOLS AND SPA'S
Violation: A MANUAL TEST OF THE FREE CHLORINE CONCENTRATION IN THE ROMAN SPA WAS 1.85 PPM. THE PUMP ROOM ANALYZER READ 2.9 PPM. ALL POOL AND SPA LOGS WERE BASED ON THE ANALYZER READING AND NOT DIRECTLY FROM THE POOLS OR SPA'S.
Recommendation: Ensure that chlorination settings are based on the manual test perfomed at the spa or pool itself. Make comparison tests at the pump room analyzer to gauge the proper setting to maintain minimum levels in the spa.

Violation: IT WAS NOT CLEAR FROM REVIEWING THE POOL/SPA PROCEDURES AND RECORDS HOW THE SPA IS TO BE OPENED DAILY. IN ADDITION THE PROCEDURES SPECIFY BROMINE CONCENTRATIONS WHEN CHLORINE IS THE HALOGEN USED.
Recommendation: Revise the written procedures for proper opening of the spa's, including halogen requirements and posting procedures if the spa's are technically closed for use, but operating for visual effect.

Violation: BULK MILK BAGS IN THE MAIN AND CREW GALLEY WERE TAKEN OUT OF THE ORIGINALCONTAINER AND PLACED IN PANS IN THE REFRIGERATORS WITHOUT TRANSFERRING THE LABEL INFORMATION WITH EXPIRATION DATE.
Recommendation: If it's necessary to transfer the bulk milk bags ensure the label information and expiration date transfer on the bag.

Violation: NONE OF THE DETACHED MILK REFRIGERATORS ON THE WMF COFFEE MACHINES HAD INTERNAL THERMOMETERS INSTALLED.
Recommendation: All refrigeration units shall have an accurate thermometer located so as to measure the air temperature in the warmest part of the unit.

Violation: CONDENSATION WAS PRESENT INSIDE THE SMALL COFFEE MACHINE MILK REFRIGERATOR AND WATER WAS DRIPPING TO A PAN OF MILK STORED INSIDE. THE DOOR TO THE REFRIGERATOR DID NOT FULLY CLOSE.
Recommendation: Repair the door and ensure that the milk inside is protected from contamination.

Violation: THE DIARRHEAL ILLNESS LOG HAD NO ENTRIES FOR FOOD OR BEVERAGE CONSUMED ASHORE FOR PASSENGERS AND CREW WITH DIARRHEA LOGGED IN.
Recommendation: Ensure that the diarrheal illness log has entries for foods eaten ashore for passengers or crew.

Violation: THERE WAS A SEAM ON THE BACK COUNTER OF THE STARBOARD SIDE BUFFET MAKING IT DIFFICULT TO CLEAN. THE SEAM CAN BE FILLED WITH FOOD GRADE SEALANT. A GAP WAS PRESENT AT THE TOP OF THE PROFILE IN THE SAME AREA.
Recommendation: Surfaces of equipment not intended for contact with food, but which are exposed to splash or food debris or which otherwise require frequent cleaning, shall be designed and fabricated to be smooth, washable, free of unnecessary ledges, projections, or crevices, and readily accessible for cleaning, and shall be of such material and in such repair as to be easily maintained in a clean and sanitary condition.

Violation: THE CORDS AND POWER SUPPLY FOR THE POINT OF SALE MACHINES WERE LAYING ON THE COUNTER BY THE SODA DISPENSER MAKING THE COUNTER DIFFICULT TO CLEAN.
Recommendation: Shorten the power cords so they don't drape the counters.

Violation: CORDS AND DRAIN PIPES FROM THE COUNTER MOUNTED COFFEE MACHINE WERE DRAPING THE COUNTER TOO CLOSELY TO ALLOW FOR EASY ACCESS FOR CLEANING.
Recommendation: Adjust or repair the drain pipes so the surrounding area can be cleaned easily.

Violation: THE SWING ENTRY DOOR HAD A DIFFICULT TO CLEAN PIANO HINGE FASTENER.

Violation: THE WOODEN FRONTS ON THE UNDERCOUNTER CABINET DOORS WERE BEGINNING TO SHOW SCRATCHES AND ONE WAS SPLIT. THERE WAS ALSO CONDENSATION FORMING ON THE INSIDE OF THE COFFEE WASTE CABINETS.
Recommendation: Nonfood preparation equipment must be easily cleanable, in good repair, and corrosion-resistant.

Violation: DISHWASHING MACHINE THERMOMETERS WERE OVER 10 F OUT OF CALIBRATION. ONE GAUGE WAS MISSING THE INDICATOR MARK.
Recommendation: Machine or water line-mounted, numerically scaled, indicating thermometers, accurate to +3oF (+1.5oC), shall be provided to indicate the temperature of the water in each tank of the machine and the temperature of the final rinse water as it enters the manifold.

Violation: MOUNTED THERMOMETERS ON THE WAREWASHING MACHINES WERE OUT OF CALIBRATION MORE THAN 8 F.
Recommendation: Machine or water line-mounted, numerically scaled, indicating thermometers, accurate to +3oF (+1.5oC), shall be provided to indicate the temperature of the water in each tank of the machine and the temperature of the final rinse water as it enters the manifold.

Violation: THE FINAL SANITIZING RINSE TEMPERATURE IN THE WAREWASHING MACHINE RANGED FROM 158-162 F. THE MACHINE WAS IN ACTIVE USE AT THE TIME OF THE TEST.
Recommendation: Automatic dishwashing machines utilizing hot water for sanitizing shall operate at a minimum of 165oF (74oC) measured at dish level.

Violation: A PEA POD WAS FOUND IN THE DRAIN VALVE OF THE DEEP FAT FRYER. THE FRYER HAD BEEN CLEANED PREVIOUSLY.

Violation: PREVIOUSLY CLEANED TILTING SKILLETS HAD SOILED INTERIOR PAN CORNERS.
Recommendation: The food contact surfaces of grills, griddles and similar cooking devices and the cavities and door seals of microwave ovens shall be cleaned at least once per day.

Recommendation: To prevent cross-contamination, pots, pans, utensils and other food contact surfaces of equipment shall be thoroughly washed, rinsed and sanitized after each use and prior to storage. Any items which are found to be soiled after being washed, must be returned to the warewashing area for immediate re-washing.

Recommendation: Non-food contact surfaces of equipment shall be cleaned as often as is necessary to keep the equipment free of accumulation of dust, dirt, food particles, and other debris.

Violation: WATER WAS POOLING ON THE DECK WHERE CLEAN SHEET PANS AND LEXAN BINS WERE STORED, SUBJECTING THEM TO WASTEWATER SPLASH.
Recommendation: Adequate space and shelving shall be provided for the storage of clean utensils and equipment and shall be located and designed to prevent contamination.

Violation: SEVERAL OF THE HANDWASH STATIONS IN NEARLY ALL OF THE CATERING AREAS, INCLUDING BARS, WERE NOT OPERATING PROPERLY(WATER FLOW WAS LESS THAN 15 SECONDS, COLD WATER ONLY, WATER RUNNING CONTINUOUSLY).
Recommendation: Any self-closing, slow-closing, or metering faucet used shall be designed to provide a flow of water for at least 15-seconds without the need to reactivate the faucet. Handwashing facilities must be provided hot and cold running water from a single mixing outlet.
