Item No.: 3
Site: Other-POTABLE WATER
Violation: THE FAR POINT ANALYZER/RECORDER WAS OUT OF CALIBRATION BY GREATER THAN 0.2 PPM CHLORINE. THE ANALYZER WAS READING 1.52 PPM AND THE MANUAL TEST WAS 1.18 PPM. THIS WAS A REPEAT VIOLATION FROM THE PREVIOUS INSPECTION. IF THIS CONDITION CONTINUES POINTS WILL BE DEDUCTED DURING THE NEXT INSPECTION.
Recommendation: The ship must have a chlorine or bromine analyzer-recorder, which must be installed at a distant point in the potable water distribution system where a significant water flow exists. The free halogen residual measured by the analyzer must compare within 0.2 ppm of the actual halogen level.

Site: Other-WHIRLPOOL SPAS
Violation: NUMEROUS LOG ENTRIES FOR VARIOUS WHIRLPOOL SPAS SHOWED VALUES LESS THAN THE RECOMMENDED 4.0 PPM BROMINE.
Recommendation: Except as may be noted above, this vessel complies with the current VSP Operations Manual requirements pertaining to the operation and maintenance of whirlpool spas. As an added measure to protect the health and safety of persons using whirlpool spas, it is recommended that vessels implement the Final Recommendations to Minimize Transmission of Legionnaires' Disease from Whirpool Spas on Cruise Ships, dated March 25, 1997.

Site: Other-MAIN GALLEY / PARIS DISHWASHING AREA
Violation: THERE WAS LARGE AMOUNTS OF WATER LEAKING FROM THE WAREWASHING MACHINE AND POOLING ON THE DECK.
Recommendation: Water supply lines and fixtures must be free from leaks and properly installed. Wastewater from equipment and sinks must be properly drained to prevent pooling or leaking of water on the deck.

Site: Other-LIDO / BUFFET PANTRY
Violation: CARVED DECORATIVE WATER MELONS WERE STORED ON SEVERAL DIFFERENT SHELVES AND ON SHELVES OVER READY TO EAT FOODS.
Recommendation: Provide a dedicated shelving unit or store these items below ready to eat foods to reduce the potential of cross contamination.

Site: Other-MAIN GALLEY / PARIS DISHWASHING AREA
Violation: THE WAREWASHING MACHINE DOORS DID NOT SEAL COMPLETELY ALLOWING WATER TO LEAK ON THE DECK.
Recommendation: Dishes and utensils must be cleaned and sanitized utilizing spray-type dishwashing machines. These machines shall be properly installed and maintained in good repair. Machines shall be operated in accordance with manufacturers' instructions, and utensils and equipment placed in the machine shall be exposed to all dishwashing cycles. All automatic detergent dispensers, wetting agent dispensers, and liquid sanitizer injectors shall be properly installed and maintained.

Site: Other-OLYMPIC SPORTS BAR
Violation: THE TELEVISION CABINETS OVER THE BACK BAR WERE HEAVILY SOILED WITH DUST.
Recommendation: Non-food contact surfaces of equipment shall be cleaned as often as is necessary to keep the equipment free of accumulation of dust, dirt, food particles, and other debris.

Site: Other-LIDO / POT WASH AREA
Violation: A TROLLEY OF SOILED POTS AND PANS WAS STORED IN FRONT OF A FIXED SHELVING UNIT OF CLEAN ITEMS.
Recommendation: Provide additional storage space for soiled pots and pans in this area.

Violation: ONE HANDWASHING SINK WAS OUT OF SERVICE.
Recommendation: Handwashing sinks must be accessible to employees at all times.

Site: Other-MAIN GALLEY / BEVERAGE STATIONS
Violation: THE LIGHT LEVELS ON BOTH THE LONDON AND PARIS SIDES WERE BELOW THE REQUIRED 220 LUX (20 FOOT CANDLES).
Recommendation: It is required that additional lighting be provided to insure at least 20-footcandles of light on all food preparation surfaces.

Site: Other-ROOM SERVICE PANTRY
Violation: THE BULKHEAD ON THE CLEAN END OF THE DISHWASHING MACHINE AND THE AIR CONDITIONING DUCT COVER HAD A LARGE AMOUNT OF CONDENSATION PRESENT.
Recommendation: Ventilation systems shall be adequately designed to remove a large percentage of the hot humid air in food service areas to prevent workers from perspiring profusely and to prevent the accumulation of condensation on deckheads.
