Site: Other-WINDJAMMER / BUFFET
Violation: THE BUFFET SNEEZE GUARDS DID NOT EFFECTIVELY SHIELD THE FOOD WHEN THE ROLL-UP COVERS WERE LEFT OPEN BY GUESTS.
Recommendation: Display tables or buffet lines for service of unpackaged foods must be effectively shielded so as to intercept any source of contamination from the consumer. Appropriate food shielding (sneeze guards) should be provided.

Violation: THE FINAL SANITIZING RINSE TEMPERATURE ON THE GLASSWASHING MACHINE WAS MEASURED AT 155-160oF AT THE DISH SURFACE.
Recommendation: Automatic dishwashing machines utilizing hot water for sanitizing shall operate at a minimum of 165oF (74oC) measured at dish level.

Violation: SOME OF THE ICE BINS HAVE EXPOSED ABSORBENT GASKET MATERIAL BETWEEN THE ICE MAKER AND THE BIN.
Recommendation: Food-contact and ice-contact surfaces must be constructed of materials that are nontoxic, smooth, corrosion-resistant, nonabsorbent, and durable under conditions of normal use.

Violation: THERE WERE NO FOOD HISTORIES FOR PERSONS WHO ATE ASHORE AND WERE TREATED FOR GASTROINTESTINAL ILLNESSES LATER ON THE SHIP.
Recommendation: Ensure that food histories are taken for anyone treated for gastrointestinal illness who has eaten ashore.

Violation: THERE WAS A TROLLEY OF PIE SHELLS THAT THE TOP TRAY OF SHELLS WAS NOT PROTECTED.
Recommendation: During transportation and storage, food shall be kept in covered containers or completely wrapped or packaged so as to be protected from contamination.

Violation: THE BELT OF THE DOUGH SHEETER WAS FRAYED ON THE EDGES MAKING IT DIFFICULT TO CLEAN.
Recommendation: Food-contact surfaces also must be easily cleanable and free of difficult-to-clean features.

Violation: THE DISPENSING HEADS WERE SOILED WITH ICE CREAM RESIDUE.
Recommendation: To prevent cross-contamination, pots, pans, utensils and other food contact surfaces of equipment shall be thoroughly washed, rinsed and sanitized after each use and prior to storage. Any items which are found to be soiled after being washed, must be returned to the warewashing area for immediate re-washing.

Violation: THE PLASTIC TUBES CARRYING CHEMICALS FOR THE WAREWASHING MACHINES WERE LOCATED ABOVE THE ATMOSPHERIC VACUUM BREAKER, BACKFLOW PREVENTER.
Recommendation: Vacuum breakers and backflow preventers must be properly installed and maintained in good repair at all times to assure reliable operation.

Violation: MANY OF THE GAUGES WITH OPERATING ZONES IN GREEN WERE INSTALLED FOR THE WRONG CYCLE OF THE MACHINE.
Recommendation: Install the proper gauges in each zone of the machine.

Site: Other-POTABLE WATER
Violation: DURING THE PERIOD 25 MARCH 2000 TO 25 APRIL 2000, THERE WERE MANY CHARTS THAT SHOWED NO MOVEMENT OF THE NEEDLE FOR SEVERAL DAYS AT A TIME, EITHER THE LOWER LOOP, UPPER LOOP AND MANY TIME BOTH LOOPS. ON ONE CHART THERE WAS NO LINE AT ALL. FURTHER INVESTIGATION SHOWED THE ENGINEER TESTED AND CALIBRATED THE SYSTEM DAILY AND THE LEVEL WAS REPORTEDLY ABOVE 0.2 PPM. ADDITIONALLY THE CHARTS WERE INITIALED AT THE BEGINNING OF THE RECORDING PERIOD AND NOT AT THE END.
Recommendation: Ensure that the responsible person reviews the charts after they have recorded for 24 hours this will ensure that the equipment is working correctly.

Site: Other-PERSONNEL
Violation: GASTROINTESTINAL ILLNESS REPORTS WERE SENT 48 HOURS INSTEAD OF 24 HOURS PRIOR TO ARRIVAL.
Recommendation: Diarrhea logs in the hospital must be accurately maintained, and results must be reported to the Vessel Sanitation Program in accordance with Section III of the "Vessel Sanitation Program Operations Manual", August 1989.

Site: Other-MAIN GALLEY / DECK 4 / POT WASH AREA
Violation: THERE WAS A FLOOR STAND OF SOILED POTS AND PANS SETTING NEXT TO THE CLEAN STORAGE RACK. ALSO, CLEAN TROLLEYS OF ITEMS COMING OUT OF THE POTWASHING MACHINE ARE ROLLED THROUGH THE SOILED AREA OF THE POT WASH.
Recommendation: After sanitizing, all equipment and utensils shall be air dried. Cleaned and sanitized equipment and utensils shall be handled and stored in a way that protects them from contamination.

Violation: THERE WAS A RESIDENTIAL GRADE MICROWAVE IN THE MESS AREA.
Recommendation: Replace the microwave with a commercial grade microwave that meets the National Sanitation Foundation (NSF) Standards at a minimum.
