Item No.: 6
Site: Other-POOL AND SPAS
Violation: WHILE A GOOD FORMAT FOR LOGS IS KEPT FOR POOLS AND SPAS A MORE COMPLETE EXPLANATION OF VALUES ARE NEEDED FOR THE DAYS WHEN VALUES ARE BELOW ACCEPTABLE LIMITS. NOTES IN THE COMMENT SECTION OF THE FORM COULD EXPLAIN WHETHER THE POOL WAS CLOSED UNTIL AN ACCEPTABLE LEVEL OF HALOGENATION IS ACHIEVED FOR THE POOL OR SPA IN QUESTION.
Recommendation: Except as may be noted above, this vessel complies with the current VSP Operations Manual requirements pertaining to the operation and maintenance of whirlpool spas.

Site: Other-DISHWASHING
Violation: WATER HAD POOLED ON THE CLEAN LANDING TABLE ADJACENT TO THE MAIN DISHWASHING.
Recommendation: Water supply lines and fixtures must be free from leaks and properly installed. Wastewater from equipment and sinks must be properly drained to prevent pooling or leaking of water on the deck or other surfaces that could contaminate food service equipment.

Site: Other-MAIN GALLEY
Violation: WATER WAS LEAKING FROM THE DECKHEAD. A STEAMLINE WAS LEAKING ABOVE THE DECKHEAD.
Recommendation: Water supply lines, steam lines, and fixtures must be free from leaks and properly installed.

Site: Other-MAIN POT WASH
Violation: SEVERAL PREVIOUSLY CLEANED SHEET PANS WERE SOILED WITH FOOD RESIDUE.
Recommendation: To prevent cross-contamination, pots, pans, utensils and other food contact surfaces of equipment shall be thoroughly washed, rinsed and sanitized after each use and prior to storage. Any items which are found to be soiled after being washed, must be returned to the warewashing area for immediate re-washing.

Site: Other-FORWARD DINING ROOM ENTRANCE
Violation: CLEAN DISH CARTS WERE SOILED WITH FOOD SPLASH FROM WAITERS TRANSPORTING SOILED DISHES TO THE DISH WASH AREA.
Recommendation: After sanitizing, all equipment and utensils shall be air dried. Cleaned and sanitized equipment and utensils shall be handled and stored in a way that protects them from contamination. Covering the carts would solve the problem.

Site: Other-MAIN GALLEY
Violation: SEVERAL CLEAN DISH CARTS WERE SOILED WITH FOOD DEBRIS.
Recommendation: After sanitizing, all equipment and utensils shall be air dried. Cleaned and sanitized equipment and utensils shall be handled and stored in a way that protects them from contamination.

Site: Other-BARS
Violation: CONTINUE TO COMPLETE THE LIGHTING ISSUES NOTED ON THE FINAL CONSTRUCTION INSPECTION.
Recommendation: It is required that additional lighting be provided to insure at least 20-footcandles of light on all food preparation surfaces.
